500 g Mascarpone
150 g Cream Cheese
40 g sugar. down from 250g in original recipe and still dropping
3 eggs
250 g Double cream
1 Tbsp cornflour..... probably needed....

Mix cream and sugar
Add eggs one at a time and mix.
Add double cream and mix
Dissolve cornflour in small volume of batter and add.

Pour into excessively partchment paper lined spring tin.

Bake 50 mins Gas 8

Chill overnight.

I made this one which has very little sweetener in it. I liked it. Very good with grated lemon peel. However, I don't think my guts tolerate the sweetener so I'm going to try it without any.
I did a baked cheesecake last weekend. I mixed a couple of handfuls of frozen raspberries in just before baking, didn't use any sweetner, it was fine.
That recipe is huge though, you might want to reduce it when experimenting

Good idea. I shall try again with raspberries, sounds lovely. Which recipe did you use?

It is huge but you can reduce the portion size in the recipe - there is a sliding scale. I reduced it to one using only 2 eggs and I think 330g cream cheese, 150g cream, 40g powdered erith....vanilla and added lemon peel.

Looks good! Will give it a go. Mine tends to be a bit "wet" and thin.....

Like you, sweeterers and me don't really get on. I find I can add a very small amount of raw sugar as my sense of sweet is way more sensitive than it was.... I find broccoli now way too sweet as a veg!!
