I don't think that skipping dinner is ever a very good idea. Not only is it going to make you hungry (and then snack later on), but there is also very little point. If you significantly reduce the carbs in your dinner, then you can get little or no spiking at all, and still fill your tummy up.
The 11.6 mmol/l will have been as a result of something you ate during the day. You just need to find out what it was, and reduce the amount of it you eat next time (or cut it all together).
