Cookie/biscuit/cake recipe

Hi, does anyone know of a good cookie/biscuit/cake recipe for diabetics. I am trying to find something that I can make when my son has his biscuit sale at school that he can take in for himself. He has had biscuit at school this week which sent his sugars into the 15's. Don't want him to miss out though. Would I be able to use a normal cookie or biscuit recipe but substitute the sugar for splenda? Would this make a big difference? Any help would be gratefully received.

Oh funny Gaynor, I just ready your post and as it so happens my colleague with diabetic son did a search, have a look at the second link here, havent checked it out myself yet but maybe there is something suitable there for you
