Having to forswear foods I have loved all my life.
Trying to find low carb meals when eating out.
I think ALL these questions, and a lot more are answered in Voleck and Phinney's book on endurance exercise and ketosis.

It is definitely time I read it myself. Not that I have ANY desire to endure too much exercise.
I can't be of any help but I'm curious about your "hitting the wall" idea. It's my understanding that hitting the wall is more of a fitness issue. i.e. the fitter you are the longer it takes. I was under the impression this is because fitter people tend to burn fat as an energy source a lot more preferably than someone when is less fit? Long endurance exercise would burn fat as opposed to shorter, more cardio intense exercise which would deplete carbs as a form of energy more readily?
Check out the keto-adaptation section in this, it may well be of interest to you:

What I wrote there was only my assumption by the way. Please don't take it as concrete because I don't even know if it's correct
