Hi, the difficulty in getting enough fibre is one of the problems I see with a low carb diet. There are 2 types, soluble and insoluble both of which are important. If you look on the forum you will find a detailed explanation of the 2 types.
The recommended amount of fibre a day is 18-25gm. (depending on where you read it)
nuts have are quite high, as are avocados, it depends on your feelings about the calories they contain as to whether you eat a lot of them.
Bran is good, All bran is an excellent cereal for fibre... if you can tolerate it.
Beans and lentils are relatively high(think of the original f plan diet)
Cabbage has about 1.7gm per 100 g , green beans the same, brocolli slightly more, cauli a bit less. Some 'lettuces' almost none.
Its dificult to get all the rda from veg alone.
This website (not aimed at people with diabetes) shows a weeks menus. It is useful as you can see the amount of fibre in a variety of foods, it could perhaps help suggest some higher fibre options.
