Type 2 I need to prepare budget friendly, everyday meals for my husband who is type 2 and I just don't know where to start. Any help would be appreciated.

Any protein plus above ground veg, so stir fries are a staple for me. Instead of a sandwich I have meat or eggs and a salad. But so much depends on other factors such as A1c starting point, need to lose weight or not, medications if any.
Making drastic changes might backfire and already I get the impression you’re feeling overwhelmed.
Basically I’ve cut out carbs such as bread, potatoes, rice and pasta plus the obvious like biscuits and cakes, sugar. Others have reduced these preferring to eat small amounts, whilst others have found substitutes.
I’m sure you’re going to get lots of advice on here

Can you confirm that your husband, not yourself has T2 diabetes, and he is on insulin. That will enable better understanding so that members are able to give specific advice.

As I am not on insulin, myself, I don’t want to make any assumptions on what to advise , though I think as long as he can calculate carbs, keep check on bloodglucose levels, and use approriate amount of insulin, then his diet need not be too carb restricted .

Hopefully some more members who use insulin will be along soon to share their experience and knowledge.
