My wife does a wicked carrot cake which with *only* 3 oz brown sugar, means that I can have a heathy slice of it without seeing my BG go through the roof. Here's the recipe:

MARION’S CARROT CAKE
~~~~~~~~~~
3 eggs
4 fl oz light cooking oil
3 oz soft brown sugar
8 oz grated carrots
8 oz dried fruit (any combination: sultanas, raisins, currants)
7 oz wholemeal self raising flour
3 oz self raising flour
Orange juice (or alcohol of choice)
½ tspn cinnamon
1 tspn mixed spice
1 tspn bicarbonate of soda
½ tspn baking powder

Preparation: Cover the dried fruit in orange juice (or alcohol of choice) and either:
a) leave overnight; OR
b) heat in microwave for 1 minute, stir well,
and leave to cool.
Lightly oil an 8 inch round tin and line the base with greaseproof paper.
Oven at gas mark 3; electric 160 degrees; fan assisted 150 degrees.

Method:
Put the eggs, oil and sugar in a large mixing bowl and beat with an electric mixer for about 5 mins. (It should look like frothy thin caramel.)
Sift the flours, bicarbonate of soda, baking powder and spices into the bowl. (Bran from the wholemeal flour will be retained in the sieve - add this to the bowl also.)
Add grated carrots and dried fruit (with all the juice).
Fold in all ingredients thoroughly.
Put the mixture in the tin. Flatten the top with spatula.
Bake for approx 1 hr 15 mins for soft textured ‘gooey’ cake, or about 1 hr 30 mins for traditional fruit cake texture. Bon appetite!

Have you actually worked out how many carbs are in that cake?
Just a quick glance at the ingredients adds up to more than 450 carbs.
It's the carb content you need to worry about not just how much brown or white sugar is in your recipe. :)

Dried fruit and carrots are a no no for me, full of sugar. Sounds nice but that would have been eaten in the good ol' days.
