Low carb/calorie snacks

Being on a Newcastle-style diet am wondering about filling in the gaps between very small meals. Raw broccoli and celery looks OK but not sure about carrots. They are non-starchy but relatively sweet and the carb count is higher than celery and broccoli but how much of that carbohydrate is actually fibre and, therefore not relevant to 'real' calories and carb absorption? Does anyone else have other good suggestions? Thanks!

As a rule veg above ground = good veg that grows underground = bad ::))
