I thought I would share my recipes for low carb stir fry sauces. Stir fry with prawns is one of my favourite meals but the sauces sold in supermarkets are shockingly high in carbs.
Coconut stir fry sauce
Grate 2 cm ginger root and chop 2 garlic cloves and half of fresh chili. Fry on one tablespoon of coconut oil (or olive oil) for a couple of minutes. Careful it burns quickly! Add half can of coconut milk and stalk of lemon grass. Simmer for a couple of minutes (you may add a bit of water if too thick). Add 1 tablespoon soya sauce and dash of fish sauce.
Peanut butter sauce
The same as above but instead of coconut milk add 2 tablespoons of peanut butter and a bit of water. You can add some chopped peanuts
