That's highly interesting. I found a baker a couple of days ago who does a Low GI bread which he explained was whole grain and with added malt. It works for me. Two slices make virtually no difference, 3 slices raises my BG by about 0.5 mmol/L after 2 hours. Bakers malt is made from barley and is a sugar replacement for those who wish to avoid refined sugars. It's an unrefined starch. Asda is certainly nearer to where I live than the baker so that is good news.
