Hi again, that is the nature of the condition, it never goes away and depending on the day and taking, everything else going on, hormones and stress of modern life, good (very few) bad (quite a few) days will have to be recognised when testing and also eating what is ok for you.
I had to seriously decide if I was going to be pedantic with testing or have an average when repeating food tests, unless it really did spike me high.
For example, I have always eaten baked beans in tomato sauce, and I would usually eat more than an average portion. When it came to testing, if I left any portion with sauce, the spike would be higher the portion size of beans. So I sieved the sauce, and just had the beans, different portion sizes and tested, and repeated testing, but regardless of portion size and sauce, my body would react with a spike and the symptoms. This is what is necessary with your favourite foods, some will be okay, and others won't be. So, my advice is to stick to what you know and if you are not sure, then test, and test again. Some food will surprise you and others are likely to be questioned especially processed production foods. Fresh food is important, meat, protein and vegetables, as are the right fats, how you cook and fats you cook with.
I don't use vegetable oils, they do have an effect on me, and for me, most saturated fat or coconut oil is preferable.
This is an important stage in how you get your nutrition for now and in the future. To maintain health and stop the symptoms. You will get there to a point where it dawns on you like it did for me. The modern diet and recommended by health care is not healthy for me, and probably not for you, and avoiding these foods (carbs) is really good for you.
