My favourite all time keto recipe. A bit of faff remembering to marinade ahead of time but still really really easy prep etc.

Marinate lamb 2-12 hrs in

900g lamb chunks
1 medium red onion chopped
4 cloves garlic minced
Zest and juice 1 lemon (I’ve used lemon juice from a bottle in a push)
1tbsp mustard
60ml olive oil
Salt and pepper to taste

Preheat oven 150c or 300f gas 2

Add to marinaded lamb
1 medium swede diced 3cm cubed
2 medium green bell peppers (capsicums)
1 large tomato diced or 240g chopped tinned tomatoes

Cover and bake 3hrs 40 mins
Remove lid (add Optional 225g halloumi diced)
bake further 20mins

Rest 10 mins

Garnish Parsley, oregano or basil garnish

Yes. It’s allegedly for 6 but in reality it does me and 3 teenage boys good sized portions with us all wanting seconds! Mines marinating right now

Curious as to why this has swede in it though? I thought swede was quite high carb/GI? Better than potatoes, but would aubergine or courgette - added later (since they are softer) be a good replacement maybe?

Small amounts of swede aren’t too bad, admittedly not ideal but overall in the recipe I guess the totals are pretty low. I’ve subbed them out for turnips sometimes which are lower. Aubergine and courgettes are a totally different taste/texture imo so maybe that’s why they aren’t used.
