I make a pudding which is fairly similar.
I usually use two eggs and double the ingredients, but:
For each egg mix 2Tbsp of almond flour and 1Tbsp of coconut flour, 1tsp of vanilla extract and 1 Tbsp of warm butter, when mixed add 1/4tsp of baking powder and sweeten it to what you like, stir vigorously.
Microwave for 60 seconds, then in 10 second bursts until the middle is firm.
As Christmas is coming, adding cinnamon, ginger, nutmeg, cloves, a Tbsp of mincemeat and another of mixed peel, maybe a couple of glace cherries in thin slices, slivered almonds or walnut pieces - even a few raisins soaked overnight in rum are all options, and then serving the result with cream can make not having a 'real' Christmas pudding not such a hardship.
I find that looking forward to pudding makes not hoovering up the last of the parsnips or other high carb options easier to manage.
Even for everyday, the zest and juice of a lemon gives extra zing to the basic mix.
