That looks like what I'm doing, except, the veggies would be the biggest base layer followed by the meat layer. What does Paleo stand for ... sorry , this is new to me.

It's for the "Paleolithic" diet, which is the diet we're supposed to have eaten before the advent of agriculture about 6000 years ago (when we were hunter gatherers). Since it's the diet that we followed for 95% of our evolutionary past, it's supposed to be the diet that is best for our health.

Number one rule is "no grains and nothing derived from grains".
