Sausage, Cheese and Egg Muffins

500 grams lean minced pork, brown this and cool slightly then mix in
12 eggs
240 gr grated cheddar cheese
choose your herbs such as dried sage, oregano, basil, dill
cracked black pepper 1/4 teasp salt

Spoon into 18 muffin tray cups and bake for 30 mins at about 180C. Cool and freeze. Zap in micro as needed for breakfast. Each muffin has about 1 gr carb.

A Protein Shake
Into a blender put
1/4 cup coconut milk or coconut cream
3/4 cup water
1 teasp vanilla essence
1 heaped tablespoon whey powder

This is your base for adding berries like blueberries, raspberries approx 3 tbsps
Try omitting vanilla and using coconut essence, almond essence
Can add some coconut oil too if desired
I sprinkle approx 1 tbsp of LSA mix on top of the glassful of the shake.

Psyllium husk Pudding

440 ml can of coconut milk (can use soy milk, almond milk or anything low carb)
2 tablespoons psyllium husk (this expands and thickens)
1 tablespoon essence (vanilla, almond, coconut, banana, orange blossom!)
Sweetener of choice --I use Stevia or Splenda

Mix together and stand. It soon takes on the consistancy of blancmange. Can be chilled as a cold summer breakfast or dessert. Layer it with diet jelly, some berries and pour a tablespoon of cream over the top for a parfait type of dessert but love it for a breakfast like this too! Warm the milk if you want a warm "porridge" . Add two tablespoons of unsweetened cocoa powder and shredded coconut for a yummy chocolate pudding.

Thanks Alison, I am just off to the local supermarket to get the ingredients for the muffins they sound great and so convenient. I'll try the others after New Year.
