Pancakes.

hit me with a realistic low carb /keto crepe style pancake recipe that doesn’t taste like an omelette - and doesn’t use something weird like arrowroot (too carby and I don’t have any) or lupin flour (too expensive and I don’t have any).

Cream cheese pancakes
50g cream cheese, 2 eggs, vanilla extract (optional) & blend, obviously not as good as real pancakes but a good substitute
 
The one meal a year I cook, I am a specialist, by the time everyone has stuffed themselves, kids have competed and feel sick, I have a couple of regular batter pancakes, yum, I refuse to deprive myself. Don’t think I’m winning role model of the month award again this month huh. Happy pancake day folks.
 
You could try these:

Lower-carb and Gluten-free Pancakes

Makes 6 · Serves 3

225g almond flour (almond meal) 2 eggs
1 tsp. pure vanilla extract
1⁄2 tsp. salt
155ml water
1 tbsp. salted butter or coconut oil

Cook for 2 minutes on the first side, flip, and cook for a remaining 1-2 minutes on the other side.

Add additional cooking fat as needed. (It helps to flip the pancakes back and forth a bit to ensure they are cooked through.)

Set aside and cook the next pancakes so that there are 6 in total. Top with your choice of butter or coconut oil, and enjoy.
 
This makes American style pancakes, for me about 8 from one batch of batter. Maybe could thin it down by adding a little milk to make a thinner pancake.

Never been a follower of "pancake day", or any of the religious festivals where so called treats that are popular, although I have eaten some great ramadan stuff from my muslim neighbour.

I don't mind a cold hot cross bun now and again. :D
 
Tried the cream cheese, egg and a drop or 2 of vanilla essence ones today. Good crepe like texture but did taste a little too much of the cheese and egg and overpowered the lemon. Also only made 2 small crepes.

You have the treatment to lower your blood sugars - insulin - so, like me, do not need to follow a low carb diet (unless you want to and find it suits you better).
In my book, the only reason you are not winning role model of the month is that you are waiting for everyone else to have their fill before thinking of yourself.
Maybe you need to teach your kids how to make pancakes.

I enjoyed my annual crepes with sugar and lemon juice.
