Skipping insulin

Is it okay to skip once a week lunch (that means skipping my dose of insulin to)??

Yes it is if you are basal/bolus. Just make sure your basal doesn't drop your levels. If basal is correct, skipping a meal is fine.

On basal/bolus you can skip either lunch or your evening meal but the one I wouldn't skip is breakfast, skipping breakfast means you'll end up with a liver dump and high bg levels thereafter.
