Tender coconut???

Try some on its own when your blood sugar is normal and stable. Grab your meter and see what happens. My guess would be it's relatively low GI due to the fats and cellulose. But everyone's GI reaction to foods is individual.

I went online to find the carbs in it and it's 8g per 8oz glass, but I found this interesting and I wouldn't drink a gallon of it because of potassium overdose
Senicide
In India, coconut water is traditionally used in the senicide of elderly family members known as Thalaikoothal. In this custom, the elderly person is given an extensive oil-bath early in the morning and subsequently made to drink glasses of tender coconut water which results in renal failure, high fever, fits, and death within a day or two.[8] Renal failure is the principle outcome of untreated coconut water-induced hyperkalaemia. But occasional drink of a 250ml tender coconut will do you no harm. Its a standard cool drink in tropical countries during the hot summer unless it affects ur BG badly:D
