Tomato soup

soaps on telly and people talking about the characters as if they were real.
Tomato soup is poplar in this house, but the canned sort is high in carbs.
I invented this one
Ingredients
I box sieved tomato
2 quite big ripe tomatoes
1 stick celery
1 chicken stock cube
Water
Salt
Splenda
1onion
little oil
Extra thick cream
Method
finely chop onion and roughly chop tomatoes
Fry onion in oil until glassy in a biggish pot .Fry chopped celery stick
add tomatoes and fry some more
When tomatoes are going mushy, add a little water and a stock cube cook a little more add the sieved tomato and some water plus a dessertspoonful of Splenda
season
simmer 5 minutes and then either serve or blend and serve
Ad dollop of cream to each bowl
serves 3 to5 depending on how much water you add and portion size.

Definitely gonna try this recipe - sounds VERY nice!

Quick question though re: carb content in tomotoes. When you cook tomotoes down, the carb content is increased. I used to make an "Atkins Chilli" (no sugar/extra fat) that I LOVED. Problem was, I used to simmer it for about an hour - this used to increase the carb/sugar content due to the breaking down of the tomotoes.

I sure do miss that Chilli... :cry:
