Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and an Aldi protein bar.
Dinner: keralan chicken curry (Waitrose made it not me!) with cauliflower rice.

That dinner sounds tantalisingly different @Rachox.

A friend, whose family hails from Kerala originally, makes Keralan prawn curry to die for. It fills her kitchen with mouth-watering aromas.

Evening all

Today, we were treated to several hours of glorious warm sunshine here in London, without the high humidity that accompanied previous hot spells.

B: Poached eggs topped with a knob of butter, avocado and crevettes, with a good grinding of black pepper.
Water to swallow tablets.
Espresso.

L: Ceviche made first thing using lemon sole fillets cured with lemon juice, zest and salad onions, then combined with garden tomatoes, Padron chillies, cucumber, Kalamata and Halkidiki olives, chopped coriander and olive oil. Salad made with lamb's lettuce, tomatoes, radishes, Romano peppers and salad onions, dressed with an olive oil, basil, garlic and balsamic vinaigrette and topped with toasted almonds.
Raspberries with Greek full-fat yoghurt.
Water to drink.

D: Seafood salad made with king prawns, mussels, lettuce, sweet cicely, vine tomatoes, celery and salad onions dressed with home-made mayonnaise, using egg, avocado oil, white wine vinegar, parsley, garlic powder and seasonings, scattered with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

My first time ever trying Basa fish fillet and have to say it is delicious!! I have never really liked fish but this is moist and has a very delicate flavour....especially when dripping in the butter it was cooked in ;) Mushrooms are frozen ones...not as good as fresh but nice enough. Now the wait to test in 2 hours to see what effect it will have... I expect little effect so fingers crossed :D.......surprised after 2 hours 6.2 but thats ok
I often buy Basa at an Asian grocery store (Basa originates from Vietnam), although the last time I bought some at Costco. The flesh of Basa is less firm than say cod or salmon, but it cooks very quickly. I am not sure in the UK, but here in Canada basa is very economical as compared to other fish species.

Breakfast :- Tiny slice of low carb toast and coffee (have to say the low carb bread I got is yucky)

Lunch :- 3 boiled eggs, lettuce, tomato and cucumber

Dinner:- Will be Basa fillet with cheesy creamy mushrooms

Snacks :- Pork scratchings or cashew nuts.

Dinner at a friend’s house, she has type 2 too so cooked a lovely low carb meal of chicken in a creamy garlic sauce with cauliflower rice followed by strawberries and cream.

I enjoy almost all kinds of seafood, but have never tried basa fish @Gezzabelle, so thank you for sharing your experience.

Your fish dinner was such a success, you may want to venture into further fish cookery. There's such a multitude of contrasting flavours and textures to try; tasty, good for the brain and diabetic friendly!

Evening all

Glorious weather here today; warm sunshine, but puffs of fair weather cumulus cloud and a gentle breeze meant it was never uncomfortably hot.

B: Two poached eggs with a knob of butter and avocado seasoned with a good grinding of black pepper
A wedge of Teifi (unpasteurised cow's milk cheese from Wales).
Water to swallow tablets
Double espresso.

L: Packed lunch made with leftover ceviche.
Lettuce cups, Romano peppers, celery sticks and garden toms with a dollop of home-made mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.
Wild blackberries foraged on the hoof to round off lunch.

D: Smoked salmon and cream cheese salad made with sweet cicely, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.

A Hearty breakfast of cheese omelette, avocado and fermented red cabbage. Then off to spend the day helping to dig a huge duck pond.
L was a waitrose 1 Cumberland sausage, a few bits of airfried chicken breast, some salad and 1/2 a Low Carb Pizza base as a wrap. Lots of tea.
D- t/a curry: Saag paneer, 1/2 a tandoori mixed grill.

B: Two poached eggs and two scallops topped with chopped, flat-leaf parsley, asparagus spears with a generous knob of butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Tuna steaks rolled in finely chopped celery and sage, baked with red bell peppers and aubergines, moistened with double cream and topped with grated Cheddar cheese.
Steamed runner beans with a knob of butter.
Salad using lettuce, Romano peppers, chicory, vine tomatoes, salad onions and Kalamata olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with roasted macadamia nuts.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with tiger prawns and mussels, rocket, avocado, cucumber, salad burnet, cherry tomatoes, salad onions and Halkidiki olives with home-made aioli for dipping, topped with toasted pistachios.
Water to wash down tablets.

Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Whole sea bass baked en papillote, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked calabrese, cauliflower, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, quail's eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
