Wishing you all the best and hope you are comfortable over next few days great that you’ve built up the lc snacks you may well need them with hospital food or be doing more fasting than planned. Let us know how it goesBreakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: gouda and chorizo rollitos with cauliflower and broccoli salad followed by Greek yoghurt and raspberries.
Mid afternoon: peach chia pudding and black coffee.
Dinner: kedgeree made with cauliflower rice followed by SF jelly, cream and LC chocolate granola.
I’ll post tomorrow’s food now as I can predict most of it!
Breakfast: none, yes that’s right no coconut porridge for me tomorrow as I’ll be fasting for surgery
Lunch and dinner if I’m awake, will be either totally unsuitable hospital food or LC snacks I’m taking in with me!
@Rachox will be thinking of you tomorrow. Hope all goes well and that you can eat some of the hospital food. How long do you think you’ll be in for?
Wow! You have been busy! They all look great. I must say, I've noticed a few recipes on the same website that I fancy trying!More adventures in baking today (not just in coconut this time!) as I've found what seems to be a very good website/blog for low carb recipes and I've been testing them out. It's called sugar free londoner (https://sugarfreelondoner.com/) and today I've made chocolate cupcakes and granola, both of which are definitely edible (unlike some of my baking attempts) and tasty! I will be working my way through the recipes.
The rest of today looked like this:
Breakfast - just tea as I was meeting s colleague for brunch, which was ...
....sourdough eggy bread, avocado and bacon (Boston Tea Party) and coffee
Afternoon - Atkins coconut bar
Dinner - salmon, broccoli, sugar snap peas and baby corn. Chocolate cupcake after!

Breakfast - usual peanut & chocolate protein bar with a cup of tea
Mid morning - coffee
Lunch - A chicken and 2 chunks of cheese. Yes that’s right - a whole Chicken. I was absolutely starving for some reason, stood at the hot counter eyeing up various flavours of chicken legs and ribs and just thought a whole chicken will probably work out cheaper. Didn’t actually expect to eat the whole thing but it seems once I’d started I just couldn’t stop
Unsurprisingly - no dinner. Not even the tiniest bit hungry
@Kingmidas on the baking front, I have just discovered a new way to eat the cream cheese topped chocolate brownie squares.
Remembering that I had some in the freezer, I popped one in the microwave for 20 seconds. The brownie bit went all warm and gooey and the top stayed cool and crunchy. That could easily become addictive.

Shelley262 I agree about the mindless eating all around us. Mind you a year ago I might have been one of those people. I would never have eaten a whole box of donuts but if I was on a long train journey I would have taken ‘healthy’ snacks like dried apricots or a cereal bar with me. I wouldn’t have taken nuts as I would have considered them too fattening!
