I have been reading with envy of all of the air fryers. All I have is a frying pan. I think it is about time I splashed out some birthday cash and bought one any suggestions on size and make. I live in a 2 person household.
I am struggling to drop my last 1/2 stone and wonder if frying stuff in butter is the cause. (I know the fat isn't the demon the government would lead us to believe) Also frying is exceptionally messy and makes cleaning the kitchen a longer job and I am no fan of cleaning anything.!
Thanks in advance for your help.

Hi All
Yesterday’s breakfast was my usual LL toast, butter, tea x2.
Lunch was a tub of prawn cocktail with lettuce.
Supper was giant fishfingers and brocolli.
Then I ate a big handful of salted peanuts.
Today’s plan is same breakfast, lunch will be egg mayo and lettuce.
Supper will be cottage pie with celeriac mash. Will try to stop at that!
@shelley262 sorry to hear of your difficulties getting out due to the flood water and hope the situation improves for you and everyone asap.

Hello all,

Thanks for the welcome back @DJC3, @Goonergal and @maglil55.
Hugs for the high waters, @shelley262. Empathize with the frustration over long commutes. Hope the weather does a turn around (and proves the forecast wrong).
My admiration for the heroic attitude re trip to the dentist, @DJC3. Hope the cracklings from Amazon turn out to be a lot more tooth-friendly.
Stellar result on your HbA1c, @Quinn1066. I really believe you got this one beaten. Hugs for the other issues. Admire your attitude.
Wings look delicious, @Antje77. Have considered getting an air fryer myself, just where to put it.
Also wonderful looking pizza omelette, @maglil55.

With respect to the porkless moo grob -- what are your thoughts on duck breast, @Antje77, @DCUKMod. I thought about maybe removing half of the meat to get to a more favorable meat-fat ratio. Do you think this might work?

Apologies for taking a while to answer Ziggy.

The duck breast should have plenty fat in it, and its certainly worth a go. In your shoes, I'd try it two ways - "thining" down, ot just as it is.

I must admit, we don't do much duck at home, as it isn't something MrB favours, so I might tend to do it if he's away. I do have one vacuum sealed, with a dry rub on it, so when I'm home I might just give it a go as it is.

One thing I am very confident is duck breast will absolutely lend itself to airfrying, and if collected, I bet the fats could be cycled into something else. @Goonergal is very good at that aspect.

I know i really eulogise about the air fryer, but it does do some things very well indeed, and costs have plummeted. Initially, they were a bit eye watering.

Hellooooo - I'm still here and enjoying all your posts. :):):)

Food is going okay - back to three scrambled eggs made with double cream and cooked in butter for breakfast - its the only breakfast that gives me 1.0 or more lower than fasting BG at 2 hours. Lunches are mostly Actimel and/or green gloop. Dinners are mainly some thing with pulses and above ground vegetables - I'm finding that now i no longer eat meat i can tolerate beans and lentils far better than i did than when i ate them with meat.

So, I finally had that doctor's appointment yesterday. He thinks the problem with my hands is both carpal tunnel syndrome AND arthritis. I got sent for blood tests and xrays to find out what type of arthritis. in the meantime he prescribed some smelly gel to put on my knees, hands and any other bits that hurt. LOL his computer kept flashing up that i need to be put on statins but i refused (cholesterol is only 5.4) he then checked all my HBA1Cs going back over the last 10 years, asked who told me i could give up insulin and other meds - then did a finger prick test because he found the way my HbA1Cs have been to be 'extraordinary'. Finger prick was 5.2 - and said he thinks i should just carry on doing what I'm doing. I suppose that was praise of a sort.

Best laid plans and all that. My meal plan for today and the rest of the week has gone a bit haywire already. Neil took me shopping only to find that neither supermarket had a shopping trolley to fit on the wheelchair so I just had to get what I could in a basket on my knees - essential things for the children's party - and live out of the freezer for this week. Neil will go back later in the week to see if he can get some of the things I want but it's just a waste of time me going if there are no trolleys. And that means I can't actually see what I'm getting - he tries, but he's only good on vegetables really; meat and fish, or even cheese, he doesn't understand.

Had the left over tomato/pepper mixture with 2 eggs this morning for breakfast. Glad to say my BG is very reasonable after that.

Was going to have broth with some veggies about 1.30, but will have to make do with something that looks like butternut squash soup (in its frozen state). Searching for some liver in the freezer, I actually found the pork mince I wanted a few days ago. Found the liver too, so it's all good really - liver and bacon tonight and some frozen onions to do something with. I've never used frozen onions so I'm not sure how they will work out - defrosted and then fried in bacon fat and butter, I should think. The bag of onions is just one frozen lump, so I'll have to defrost it all and then think of something to do with the rest when I see what the resultant defrosted veg is like.

Half way through my week off. :spitoutdummy::spitoutdummy::spitoutdummy:
But beautiful weather today, and a lovely dog walk (well, a hobble on my part. Thanks Ms Physio. Oops. Apparently I am still annoyed about it)
I have prescribed myself an hour in the hot tub at least once a day until my knees rejuvenate to those of a 20 yr old athlete.
:D

B: 2 slices cold pizza (in the hot tub)
L: not needed
D: will either be cheesey mince or a chicken bake. I will put pasta in half of it, for Mr B.

It wasn't butternut squash, it was the soup I made with cauliflower tops a week or so ago. It tasted fine AND BG is still dropping. Win, win.:angelic:

Just made a red velvet cake for the weekend - there will be parents there as well and something a bit more sophisticated is required for them. So for the kids it will be macaroni cheese and crudites followed by chocolate cupcakes (and, I daresay, some "pop" or other, but I don't deal with that) plus some sweets and so on but for the parents it will be leek and potato soup, chunks of bread, possibly a vegetable curry with rice, brought by one of the Syrian mothers and red velvet cake. Must remember to take something for me to eat as well.

@Chook good to see you, sorry about the carpal tunnel and arthritis. Great result with your doc re HbA1c and coming off meds - a bit more praise and interest would have been in order though I think.
@Brunneria your self prescription sounds a lot more helpful, not to mention enjoyable than the official line. Hope it does the trick.

Today I had black coffee til lunchtime, then another DD favourite lunch https://www.dietdoctor.com/recipes/keto-deli-roast-beef-coleslaw (included the sugar free dill pickles).
Mid aft sampled a pack of Awfully Posh ‘toothkind’ crackling which was a gift from someone lovely.
Dinner https://www.dietdoctor.com/recipes/crispy-chinese-pork-cabbage which was jolly nice. The recipe says to cook the pork in the oven covered in course salt, then brush the salt off and shove under the grill for the crackling. I’ve never done this but it worked brilliantly, best crackling ever and not at all hard, just crispy.
Teeth and fillings all still intact I’m happy to say.

Evening all. Colder here today but none of the forecast snow or ice yet. Tea with almond milk and sweetener for breakfast - 3 x 700 mls. CWC with cinnamon and sugar free caramel syrup plus 42 gms bar of Perlege ganache chocolate (<6 gms carb I calculated; 14.2 * .42) not seen that before but I liked it. 5.6 @ 2 hrs high but not alarming - fbg was high today anyhow. Evening was short rib (in IP) on a bed of spring cabbage in butter. Found the Perlege at Elvedon estate food court seeking out local meat. Bought brisket - see if proper brisket works- and up market chicken. Travelled on to Euston estate butchery (been there before) for 748 gms short rib and Barnsley chops - butcher cut while we waited and they specialise in lamb. Iselham butcher not open Wednesday but all their meat is home produced - hopefully some mutton left as I don't think I've ever eaten it. Their goat was good and fascinated by the Iselahm blue pigs. Elveden is owned by Lord Iveagh so a local farm would be preferable. Trying to source meat and veg locally as much as possible. Think we will swerve the £42 organic veg box No 1 son had! Beef was tender but I really miss gravy or something to "cling" to it.

I take my hat off to you Ann for baking cupcakes and a Red Velvet cake for others when you cant eat it yourself. That is truly heroic IMO. It can be quite satisfying running down the freezer I think all sorts of unexpected surprises can be enjoyed. Good news about the bg reducing.

I have this one.

One person household, but you can stack it by using a trivet. I have this trivet:
https://smile.amazon.co.uk/TOOGOO-Multi-purpose-Skewers-Compatible-Phillips/dp/B07JHCRRHH

I’d definitely consider a larger one but depends what you want to cook in it. Lidl sometimes have them on offer.

Edited to add the link to the air fryer!

Lovely to see you back @Chook but sorry about the carpal tunnel and arthritis.
@Brunneria hot tub sounds like a great idea.
@shelley262 thinking of you amidst the floods

Having not eaten since lunch yesterday, needed breakfast around 8.30 so headed to the cafe near work for bacon eggs and cheese.

Went for a walk in the sun in lieu of lunch. Ages since I’ve done that and it was fab. Took a colleague along with me - managed to get us both lost in a graveyard and was late back for a meeting  colleague was later seen requesting a large caffeine hit as she was exhausted!

Dinner was 2 Waitrose free range Cumberland sausages, 4 small rashers streaky bacon and some moo grob. Forgot to,spray it with olive oil, but still nice and crisp. Not sure whether @Antje77 will covet the pork or the bowl most :D

Very envious of your selection of good butchers. We have two each 5 miles in either direction and I hope they will survive. I would be more willing to pay a lot for good meat over veg. Just me. Great you are finding your feet and I hope Julie is getting better. Its wonderful that you the grandparents and the grandchildren are benefitting so much so far.

@Chook good to see you and mixed blessings from the doctor it would seem. Good that your diabetic review was so positive but I hope you dont have carpel tunnel syndrome as well as arthritis. It must be very difficult to manage butadmiration for your upbeat attitude.

Leftover stuff with things casserole today. Still a half portion left for tomorrow so tomorrow I'll add either a salad, the second kroket from the 4 in the package I bought last week, or a moderate carb vegetarian thing, depending on what I feel like eating and on what diabetes is up to.

Did a group sports thing yesterday (fun) so today I'm reminded of all sorts of muscles I'd forgotten I had. Did you know that this particular ache is called 'muskelkater' in German? It literally means that your muscles are having a hangover :hilarious:

Breakfast: Usual cheese and mushroom omelette, bacon.
Lunch: Savoury snacks and beer at the club.
Dinner: Barbequeed chicken legs, salad.

Drinks: Black coffee no sugary, beer, water.

The new fridge was delivered first up yesterday morning unboxed and installed, the old one was taken away, so that was a bit of a relieve as it is hard to get rid of the stuff

Photo sums it up. Bewdley is flooded in spectacular style - water just poured over the flood barriers on one side of the town, luckily after most affected homes evacuated had happened - yesterday evening and overnight - and most roads around Bewdley are shut! This one in photo is normally a busy race track to one of nearest towns Stourport.
At least today I managed to stay near home no hours spent in car and traffic jams! We live on the wrong side of river to get to many places so a bit marooned! Historic flood waters here in Bewdley and it’s not predicted to change soon in fact it’s likely to have another peak this coming weekend. Force of nature and rising water levels!
Breakfast two boiled eggs with half a toasted chaffle
One square of 100% choc with coffee middle of day
Dinner delicious lasagne made using chaffles instead of pasta served with avocado salad and glass of red wine followed by dd lc choc and raspberry brownie with yoghurt and cream

When I mentioned this, she smiled and said ‘oh yes, but you must keep them up. Arthritis is takes a long time to get better!
- which is a teensy bit misrepresentative, I think, don’t you?
I mean, arthritis is usually a one way trip, isn’t it? And the pain stops, sure, but only when high as a kite on painkillers, or in the grave
:wideyed: What physio school did she go to?! :wideyed:
