Antje, if you like a chilli hit, the earlier recipe i,posted is fab. The resultant oil is fierce, but you can use less/more depending on your taste.
Will definitely look into it. I'm lucky in that our rather ugly Dutch history in Indonesia and Suriname has left us with many different sambals or hot sauces to choose from in even the smallest supermarkets, and way more in our specialist shops :)
Apart from always having a couple of fresh chilli peppers laying about to use, and various powdered varieties, I also have 4 or 5 different pots of opened spicy sambals at any given moment. I can't imagine cooking without them :)

Chook, I don't want to be alarmist, but do you have any of the more usual COVID symptoms? Allegedly, Medics are seeing quite a variety of rashes in COVID patients these days.

Unlikely, but still worth just going though the checklist?

Thank you both very much for your concern. :)

I've had a dry cough since about the beginning of lockdown (maybe a bit before) and I do get occasional waves of exhaustion and breathlessness (although not so much of the breathlessness recently). I did speak to my GP about it when it first started but he didn't seem worried as I hadn't been outside for some time BUT I think Mr C who is/was a key worker might have brought it home from work. If i have had it then I'm in the recovery phase which I've read is different for each person. I just hope it passes quickly.

It seems I not only get dawn phenomenon these days but also afternoon phenomenon.
Ate breakfast about 9:30: LoDough with smoked salmon, mayo, 1/4 avocado and sliced h/b egg.

BG around lunchtime 5.3 all good. ( no food)

Dinner about 6:30 and pre BG was 6.9!!! For goodness sake!( not the phrase that sprang to mind at the time tbh) anyway is was a DD recipe Keto sesame salmon with Thai curry cabbage. 1 glass white wine then DGF chocolate fudge brownie with cream.

I'm glad I'm not the only one who gets late afternoon phenomenon. I've found on the days that I've skipped lunch or only had an Actimel drink that I get a liver dump in the lead up to dinner. If I have the Actimel plus something else for lunch it doesn't happen. BUT back in the day when I did that five day water only fast the late afternoon phenomenon only happened on the first day but i did continue getting the morning ones each day. I think my liver has got a mind of its own!!

Today was guinea pig day! Which meant I completely forgot to eat something before leaving the house at around noon. So apart from a couple of bites from an apple (which I'd brought for the guinea pigs) to make sure I wouldn't drop while driving, breakfast had to wait until 4pm, when we got back. This late breakfast was a low carb cracker with a thick layer of over-mature (on the line of gone off) brie, eaten while working to quickly improvise a couple of hiding places for the guinea pigs.
Good thing I like my cheeses strong and tasty :)

Evening meal was a quickly thrown together mix of cauliflower rice, onion, mushrooms, bok choy and remarkably tasty vegetarian chicken pieces from Lidl with black bean sauce, Indonesian hot sauce, powdered ginger and cumin, and lots of fresh garlic


Haven't figured out to do the thumbnail pictures, so filling the screen now with guinea pig spam. My apologies, but I promised @maglil55 's grandson no. 1.
It's the new piggies ride from the guinea pig shelter to their new home, the pen with added hiding places, and a picture of them getting used to their new house :)

Tomorrow I'll get back on track with food pictures again, but I couldn't disappoint Maglil's grandson, could I?

awwww gorgeous! Brings back memories of my childhood ginger guinea pig pet called (rather unimaginatively) Ginger. I always wanted a dog so I treated Ginger like a small dog - he (or possibly she) had a little harness and lead and spent a lot of time in the house with me trying to teach him commands and tricks.

Yes, I'm signed up to the Covid symptom app - they haven't come back to me at all.

Breakfast: scrambled eggs and kimchi on the side
Lunch: Actimel drink and blue cheese laughing cow on sesame Ryvita - not sure why they call this variety of laughing cow 'blue cheese' as it certainly doesn't taste of it - will try another variety next week
Dinner: halloumi burgers, grilled tomatoes, vegetarian sausages and fried eggs

I'm just putting together the weekly lottery that is my Asda delivery order and they've STILL got an egg shortage!

Aw so cute - takes me back to when my boys were young and had guinea pigs (they are such lovely little animals and so vocal!) - happy days :)

Brunch - usual full fat greek yoghurt with the berries and double cream (just as well I like it!)

Dinner will be - prawn cocktail, chilli roast salmon (not sure with what veg yet) - something fishy going on today! and possibly 2 squares of 90% lindtt dark chocolate with peanut butter on top (yum). :happy:

Getting my recording done early as I’ve finished my food for day and also planning next to watch the new low carb movie ‘fat fiction’ - looks interesting. I’m going to watch free on amazon prime as I’m a member not sure if it can be downloaded for free in other places but looks interesting.
Did 18/6 as normal today
Lunch bacon and basil two egg omelette and a few walnuts nibbled whilst cooking ( I sometimes think nuts should come with a red warning label!)
Dinner pork chop, stuffed mushrooms and celeriac chips with glass of dry white wine mixed with soda pudding a few garden berries with Greek yoghurt. Just had decaff coffee with square of 100% choc.
Hoping to get out for a long hike tomorrow provided all ok.

@Chook I agree that livers have a mind of their own and are very contrary things. I don’t know if I’ve missed a post but did you hear about the new rescue dog?
@Antje77 the guinea pigs are very cute. No such thing as over ripe Brie in my book though. The stinkier the better!

Aww, thank you. I'm more or less fine today - it comes in waves - fine one day and who knows what I'll feel like the next.

Back in the day - about 30 years ago when (I was veggie the first time) I missed bacon, this time around I'm missing lamb and I've had those tiny lamb chops from Asda... and yes, they were delish!!

No.... never heard anything, which is a shame because we could have given her a good home. BUT.... I'm now struggling with Mr C's need for another dog. Apparently if I've agreed to give a home to a gentle 3 y/o Labrador girl with epilepsy he doesn't understand why I'm not keen on the idea of a 'difficult to control' Mastiff boy of the same age. Hmmm

I think I forgot to post yesterday having had a sleepless night on the previous night because my Mum was driven off to hospital in an Ambulance at midnight having fallen in the bathroom. Picked her up the following afternoon sporting a plastered arm :(
Back home now for a week while my brother takes over looking after her.
Anyway today’s food:
Breakfast: Yay my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee :happy:
Late morning: black coffee and mudder phd bar.
Late Lunch: 2 x Babybels followed by Greek yoghurt, LC chocolate granola and a few dark chocolate almonds.
Dinner: ribs and roasted Mediterranean veggies followed by SF jelly, cream LC chocolate granola.

Brunch was rather a disaster today. I had a slice of black pudding and a slice of cold pork but, foolishly, I put the black pudding in a roll. I really fancied it but, to be on the safe side, I took quite a lot of insulin. BG rose to 22.5! I was feeling pretty awful too.

I have taken more insulin during the day, without food, and managed to get it down to 11 by 8.30 pm but I don't dare eating anything else today. Trouble is, I am very hungry.

Been there done that - loads of sympathy from me. *hug* it's horrible to feel hungry when you know your BG is high!

Try plain boiled eggs, zero carb cheese and/or plain meat and lots and lots of plain water.

I tried a new recipe today hoping it would be something I could take to eat at a birthday tomorrow, but there was so much cheese in relation to all other ingredients it ended up being just a greasy, sickly mess and a waste of time and expensive ingredients.:grumpy: Have one more to try tomorrow morning, hoping that one works or I will either have to stay hungry or eat birthday cake :(

Up early because we had a carpenter working in our bedroom!
B. Yogurt, seeds and raspberries
L. 90 sec mug bread with avocado and 2 tomatoes. 1 piece of the failed pesto whirls.
D. Still so full of grease could only manage some homemade kale soup.
Did cheer myself up with a spoonful of hubby's ice cream

I had a bottle of chilli oil which also contained cocoa, which was produced by Hotel Chocolat - it was a gift and I’d never previously tried chilli oil. Don’t fancy chilli chopping so am looking for something mild and off the shelf.

It's really easy to make. I've been doing it for years. I got into it in Italy. You need a bottle you can seal. 500 mls extra virgin olive oil, 2 or 3 dried chillies ( we grow them every year) , about a teaspoon chilli flakes ( mixed if you can get them) and , if you want to get chocolate into it , 20 to 25g cocoa nibs ( amazon & Holland & Barrett have them).

Roast the cocoa nibs in a cool oven for about 15 mins - about 140C. Don't let them burn.
Put the olive oil in a pot with the chilli flakes and warm it slowly for about 15 mins ( don't let the oil smoke).
Put your 2 or 3 whole dried chilli into your bottle then add the oil, the flakes and the cocoa nibs.
Let it cool before sealing.
You can use after a day but the longer you leave it the stronger it gets. You'll see it getting more red as the days pass. If it gets too hot just add more olive oil. Find a nice dark, cool cupboard to store it in. Oh, and give it a shake every day.

I'm starting to feel quite famous now I have a fan. I feel I can handle the fame just fine, and I still look upon all you non-famous people like my equals, no worries about that.
Please tell your grandson he can have as many guinea pigs as he wants for his 43rd birthday. 43 is a perfect age to start a gaggle of guinea pigs. That should buy his mother some time :)

And I ate the same as yesterday, plus one very small hard boiled egg with mayonnaise.

Stayed at mums for another night and day as the night before I hardly had enough sleep I helped out with my sisters as mum gets up a few times during the night and calls out for help so I usually assist so my sisters can either stay in bed whilst I take mum to the bathroom so didn't feel comfortable driving 70 minutes back home so stayed an extra day and slept not even waking up when mum got up during the night. I felt bad doing that.

Breakfast I noticed the bread that they use are thick slices and realised that having 2 the day before most likely added to four slices of bread so I sliced the bread in half to form two slices of bread and toasted with some cheese and had a coffee although my BSL rise it only went to 8.1 mmol/L so high but not like the 12 the day before. Went up the road to buy a few things from the local Lebanese shop near mums place.

Lunch my sister offered to boil eggs so had 2 eggs and I cut up a slice of cheese 1 baby cucumbers and 1/2 tomatoe for lunch a friend of the family popped over while I was eating it and she was like wow that's healthy I would never thought of making that. Also had a black coffee.

Dinner my sister decided to make some chicken pies they recently bought a pie maker so wanted to try it they also made own pastry. Had one but that's all they made where pies no veggies. Later that night after dinner had another coffee and got tempted to have a ice Volvo lamington biscuit as was hungry still.

Drove home and got home around 10pm I was still hungry for some reason so had brought Lebanese bread today so made a cheese sandwich. I think the carb overload was causing this hunger.

Today breakfast 10am BSL 5 mmol/L
Had some keto pancakes that I had made before I went to mums on Tuesday in the fridge so nuked them and had 1 large strawberry and a spoon of fresh cream and teaspoon of maple syrup and black coffee then around 3.30pm was a bit hungry so made a coffee and ate camembert cheese with truffles on 3 salada biscuits. Dinner plan to make kibbeh nayeh yesterday I brought from Lebanese butchers fresh ground mince leg of lamb that is just meat no fat is added to it its grounded very fine so to make the kibbeh you add some soaked bulgur salt and pepper and combine and eat raw I will have it with herbs tomato and my pickled whole cauliflower that I made a week ago and a piece of Lebanese bread.

Morning All :)

Yesterday was kefir and lc hot choc for breakfast
Lunch was my homemade instant chicken soup blob (well, it is instant if you discount defrosting time)
Dinner was bassa fillet in cheese sauce. I shall pay for it later today, because I added red pepper and leek to the sauce :nailbiting:
Mr B is now a Bassa convert and would like it weekly. Next time I shall either use more fish, or less sauce.

I love guinea pigs.
We had Nibble (black rosette) and Flame (ginger rosette) and then Bumble (bumble bee stripes smooth coated) and Skippit (brown smooth). They lived in a hutch all summer but moved into the living room every winter in a formica and chipboard run that my father built. They were in total command of the entire household, and nearly spherical, on account of having learned that hysterical high pitched squeaking would result in food to shut them up. They knew the sound the fridge door made, so every time it opened, they shrieked, and got some cucumber, or carrot or whatever. They were terrible despots, and utterly adored.
