Porridge with raspberries, coffee and cream. Lunch - couple of crackers and seriously cheddar spread, peach and baby tom's. Dinner - 2 chicken steaks (M& S) with salad. Raspberries & cream. Several coffees throughout day with cream. BG readings all under 7.1.

Heat has proved wonderful for my eating habits, not so good for this 1976 baby's mood :arghh:

Have consumed more liquid that I could keep track of. 'Tiger who came to tea' proportions!

D - Salmon burger, avocado and watercress salad.

Do you have Patak's curry pastes in the States, @Kristin?
They have quite a high carb content, but you only use a tablespoon, and most of the carbs are ground spices.
This recipe makes 4-6 portions, but is infinitely adjustable.

I make curries up as I go along, using meat and veg in the fridge, to be honest.
This one was:

Onion and garlic sweated in a dab of coconut oil til as translucent or brown as you want.
Diced chicken thigh, red pepper, and courgette thrown in, with a couple of tablespoon of Pataks Mild Curry Paste
A good quality organic stock cube and just a dribble of water.
- most of the liquid in the curry is released from from veg and chicken during cooking so you don't need to add more than a splash of water.
Lid on over a low heat for 20? mins.
Then add the cauli rice, stir, and let continue cooking another 5? 10? mins til the cauli is cooked.
Stir in a bit of coconut cream (I use the Maggi powedered one, but a jar or tin would do just as well)
Serve.

A complete meal in one pan.
I LOVE minimising washing up! :D

Sounds delish. Not sure if we have the paste but I'll look. We probably don't, you guys get all the cool stuff lol. I. Like you, I rarely follow A recipe, just get ideas. I doubt just curry spice would be as good. I do t do coconut oil but my taste buds say butter would be good. I assume the paste is tomato based?

I used to follow recipes and then make it again with MY alterations. Now my family says can you make this but Kristinize it first. Hahah. I used to love to cook, now I like it simple and like you, less clean up.

I try to keep several different types on hand, and then cook according to my whim.

But if you do find them, always buy the pastes, not the sauces. The sauces have much more iffy ingredients, and much higher carbs.

Not having chocolate, it's a darn disaster!
For lunch; I had:

Roasted chicken breast, grilled mushroom & zucchini with Parmesan cheese on top! Oh yum!
Also some beans and tempeh (stir fried with just a little bit of olive oil).
So filling and only rose my BG by 20-25 points. I was 101 mg/dl before lunch and 2 hrs after 124 mg/dl.
Yay!! :happy::happy::happy::happy::happy:

How'd you make a cauliflower pizza?

Ingredients:
I got a tub of cauliflower couscous to save time but you can blitz your own instead.
1 tablespoon coconut flour
1 tablespoon ground almonds
50g finely grated Parmesan
50g grated cheddar
1 egg
Pinch of salt
Oregano or herbs
Topping: 2 tsp tomato paste, mozzarella, cheese, mushrooms, tomatoes etc

Method:
Microwave cauliflower in a bowl for 5 mins
Add the rest of ingredients and mix well.
Split in half and form two dough balls. (2 large pizzas)
(If mixture too wet add more almonds or coconut)
Press the mixture with hands until 1cm thick on a grease proof paper on a baking tray. (See image)
Bake at 180 for 10/15 mins until golden, add toppings and return to oven for 10 mins

L 2 oz tuna salad with mayo, 1/4 avocado celery radish and pinch onion
D half salmon burger with spicy mayo sauce, 1/4 avocado, small salad, vodka water with lemon twist
Snacks. Pinch of pumpkin seeds 3x

Do tell....
I'm kind of testing coffee too. Seems it may effect me in the morning but not in the afternoon. I can't do chicory. Nothing fermented. Dang intolerances.
