What have you eaten today?

  1. So far today:

    B: slice of cheddar (was rushing out)
    L: baked avocado with applewood smoked cheese and walnuts

    Dinner will be a family buffet at mum's. I will make and take two dishes to ensure there is something I can eat. I'm an easy guest :angelic: Mexican mixed bean salad and mini cheese and onion almond muffins.

    1/2 Lidl HP roll with 3 x eggs scrambled with a spoonful of Philly

  5. Cheese and onion muffins

    Dry ingredients:
    1.5 cups ground almonds
    1 teaspoon baking powder
    1.5 teaspoons onion granules
    Salt and black pepper
    1 cup finely grated cheddar
    (Additional grated cheddar for topping)

    Wet ingredients:
    2 tablespoons melted butter
    2 tablespoons double cream
    2 tablespoons water
    2 eggs

    Mix dry ingredients. Mix wet ingredients. Mix wet and dry together.
    Put into silicon muffin cups and top with a little grated cheese. Fill the cups only 2/3 full as the muffins rise a little.
    Bake for 15-20 minutes depending on the size of your muffin cups. 180 degrees.
    Cool before eating. Can be frozen.

    I made them with chives last time, but forgot today. Made 10 muffins sized 6.5cm at widest point.

    Simply cubes of cheddar interspersed with raspberries on 8 inch skewers. Had two. It makes the food last longer! ;)

    B; Scrambled eggs, 2 x bacon, 1x chipolata, mushroom, tomato
    L: Chicken & Lamb Koftas (M&S), Beetroot falafels (Waitrose), Peppers stuffed with goats cheese
    D: Venison steak with an orange & juniper butter, cauliflower, green beans and cabbage
    P: Homemade NY style Cheesecake with blueberries

    ....and a few glasses of a very nice Minervois.

    B: Cacao zoats with flaxseeds and coconut milk
    run in the park
    walk to market and back
    L: Leftover minced beef curry with kale, a bit of brown rice and fresh salad on top (2 hours postprandial BG 5.7 :woot:)
    cleaned kitchen floor
    cycling to supermarket and back
    D: fried aubergine with chickpeas and tahini, some kimchi, cucumber and beetroot, homemade coleslaw (2 hours postprandial BG 6.2)

    I've been camping in the woods for the last two nights. I haven't kept exact records but ... avocados, babybels, bacon, sausage, steak. On Saturday we went to town, visited a restaurant and I had the best courgette soup ever followed by chicken with chorizo and tomato sauce. I even had a beer on Saturday night. Probably spiked my BS a bit, but I didn't take my meter into the woods so it doesn't count!

    B - bulletproof hot chocolate
    L - stir fry courgette, pepper and mushrooms with creamy peanut sauce
    D - lamb steaks, courgette noodles, roasted green beans
    Pink fluff for pudding (sugar free jelly whisked up with double cream rather than water after adding the hot water to melt the jelly - proper retro pudding!

    B: a pancake made with rye sour dough, coconut flour, eggs and kefir (difficult to hold together, but very tasty, a bit sour and lemony :hungry:), with leftover Thai beef and kale curry
    L: (break during a strenuous walk through moors) a cold pancake from this morning on its own, then raw veggie sticks, then a small slice of a brownie made by a friend
    D: chicken stock made with chicken feet - I took the chicken feet and dipped them into lemon juice, chilli and salt, then some mole with shredded chicken, then half a cup of mixed nuts

    B: blueberries, Alpro coconut yoghurt, homemade granola (no grains)
    L: salmon fillet, roast cauliflower, broccoli, courgette, half a corn on the cob; strawberries & raspberries
    D: cheddar and mayo wrapped in ham, 2 boiled eggs with butter & salt, lemon tart & clotted cream!

    L: smoked makerel pate with celery sticks, and 2 beetroot falafels
    D: roast pork belly, cauliflower mash, green beans and sautéed cabbage

    Later will be a slice of homemade NY cheesecake (maybe two )

    Ok yesterday:

    B: 500ml water
    250ml fat chocolate drink
    2 egg omelette with grated cheese n chorizo.

    S: nuts

    L: salad and various anti-pasti (lidl has got manchego cheese for 99p!!!) Chorizo./parma ham/salami n fennel/brie the list went on it was fab. 500ml water

    D: whole grilled trout with salad. 500ml of water

    S: raberries, blueberries with soya dream and 1 square of 85% grated over the top. Mmmm

    Today: 500ml water
    2 egg omelette like yesterday with 1/2 avocado drizzled with lemon, some chilli flakes and salt.

    Will make a fat chocolate drink to leave with... have a great day everyone.
