What rise is acceptable after a meal to judge its effectiveness

So if my Sugar levels were just say 6.5 before a meal, is 2mmol acceptable rise, so 2 hrs after the first bite being at 8.5?

2.0 mmol/l is alright for 2 hours after the first bite. It's what to aim for, or lower. Keep that up, and your over all numbers'll likely go down.
 
But for a normal person (without T1/T2) I think its supposed to be below 7.8?
 
ok so large chicken ceasar salad with loads of croutons and grilled chicken and salad and cesar sauce in a cafe. Pre meal 6.1 two hours after 7. I guess thats acceptable?

Wednesday was crazy i had a chciken swarma (chicken kebab in a white tortilla and some fries) 1 hr latter it was 6.8 two hrs latter it was 6.4 3 hours latter 6.1
 
Sometimes I see the figure of 7.8 quoted, and sometimes 8.0 and occasionally see 8.5 (for diabetics in remission).
Different organisations and different countries use different figures in relation to diabetes, they often use different units as well.
For example the USA uses different units, but even when converted their threshold for Pre-Diabetes is lower than ours here in the UK, which partly explains why they have a higher proportion of pre-Diabetics than we do. Though of course many diabetics and pre-diabetics are waking around un-diagnosed!
