Pork, Chicken & Chorizo Stew

500g diced pork
8 chicken drumsticks or thighs, off the bone
1 chorizo sausage or other smoked sausage, could use a Polish style sausage, halved & sliced.
1 white & 1 red onion, chopped.
6 cloves of garlic, thinly sliced.
1 tin of chopped tomatoes
1 tbsp of smoked paprika
1 tsp caraway seeds
Salt, pepper
500ml chicken or vegetable stock
Chilli flakes, optional

Melt ghee, brown the pork and chicken, add onion and chorizo, fry for a few minutes, add the tinned tomatoes, garlic and seasoning, finally add the chicken stock, enough to slightly cover the meat in the dish.

Place in an oven proof dish, cook in the oven at 160C for about 90 minutes. Remove from oven, drain most of the liquid into a sauce pan, add guar gum or a little cornflour to thicken the sauce, simmer for a few minutes, pour back into the casserole.
Serve with steamed vegetables, cauli mash, couple of new potatoes (<< all depends on how low carb you want to be)

Hungarian Goulashsoup with Frankfurters

250g stewing beef, cut into 1/2 cm dice, I used sharp scissors for this
2 spanish onions, finely chopped
2 carrots, cut into thin slices
3 peppers, cut into small dice
50g smoked bacon, use scissors to snip into small pieces
2 tbsp clarified butter/ghee
2 fat cloves of garlic, finely chopped
salt, freshly ground pepper
1 tin chopped tomatoes
1 tbsp paprika powder
500ml beef stock
guar gum or if you are not so low carb use cornflour to thicken
Frankfurters

Use a large pot, melt butter, add beef, bacon, onion, garlic and a little tomato puree, sautee for 5 minutes. Add salt, pepper and paprika, stir through. Add carrots, peppers, tinned tomatoes and 500ml beef stock.
Bring to boil, reduce heat, simmer 50-60 minutes, thicken with a little guar gum, stir in a couple of tbsp soured cream.
Warm up Frankfurters (either blitz in microwave for a few seconds or place in hot water), serve soup in bowls with a Frankfurter added, eat with slice of bread (oatbran bread is perfect, recipe in the low carb section)

Bakonyi sertesborda

Oil or ghee
600 g Pork steaks or chops
salt and pepper
100 g smoked lardons
150 g onions, chopped
400 g mushrooms, sliced
1 tsp Paprika powder
200 ml soured cream
100 ml whipping cream
1/2 red pepper, diced
1/2 green pepper, diced
1 tomato, diced
water, stock or wine tomato, diced

Make small cuts all around the edges of the pork steaks/chops (so that they stay flat when you fry them), place between two sheets of clingfilm and give them a bashing with the rolling pin to thin them out a little.
Melt ghee or heat oil in a large pan, fry the meat until brown on all sides, remove the meat from the pan, add lardons to the pan and fry until brown and fat rendered, add onions, peppers and mushrooms, fry for a further 2 - 3 minutes, add seasoning, return pork to the pan and add enough liquid to slightly cover the steaks.
Cover and simmer until meat is tender, stir in soured cream and whipping cream, add a little guar gum or corn flour to thicken, simmer for another minute or two and serve.
Faux roasties (recipe in the low carb recipes thread)for me, family had new potatoes and green beans with it.

Winter muffins/Christmas muffins

3 eggs
125 grams of almonds
1 Splenda or your preferred sweetener, please taste the mixture
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon, slightly heaped baking powder
75 grams of melted butter

Whisk the eggs, mix together with all the dry ingredients, make sure there are no lumps, add melted butter. Fill into muffin cases and bake at 175 degrees for 10-12 min.
***You might want to adjust the amount of spices to suit your taste, I used 1/2 tsp, but the original recipe states 1 tsp, same with sweetener

Orange Cream:

Whip double cream stiff (with a little sweetener if desired), stir in a mashed up or cut into tiny chunks small clementine, spread on top of the muffins, sprinkle with a little cinnamon.

Drinks

Orange cocoa

2 servings:
2 cups cream
2 cups water
2 level tablespoons cocoa powder
2 level tablespoons sweetener
Zest of one large orange, finely grated

Put the cocoa powder, sweetener, orange zest and 1 cup cream in a saucepan. Bring to a boil and let the mixture simmer slightly for 2-3 minutes, stirring a few times. Add the remaining cream and water, heat through. You can sieve out the orange zest if you prefer otherwise it will just settle at the bottom of the cup.

Egg nog
Ingredients:
1 egg yolk
sweetener equiv to 2 tbsp of sugar
2 cups cream
3 cl of rum, brandy, calvados or whiskey
cinnamon/nutmeg - optional

1. Whisk sweetener and eggs until fluffy.
2.Heat the cream in a saucepan or in the microwave and pour it while whisking into the egg. Add any spirits.

Christmas Coffee

In a mug - mix 1 tsp cocoa powder with a tbsp sweetener, add a little hot water stir to a smooth paste, top up with coffee, whip cream until stiff, add a little sweetener and cinnamon, place a huge dollop on top of your coffee, dont stir it in, sit back, relax and sip coffee through the whipped cream topping.

Irish Coffee
Ingredients:
4 cl whiskey
2 or more, spoons of Splenda or sweetener of your choice
1 to 1.5 cups of strong coffee (espresso)
about 1 cup double cream

Warm a large stemmed drinking glass, or glasss mug.
Pour in the whiskey and sweetener
Pour in the coffee and stir until sweetener is dissolved.
Slowly fill the glass up to the edge with the cream so that the cream floats on top of the coffee. One trick to avoid the cream mixing with the coffee is to add the cream slowly pouring it over the back of a spoon.
Do not stir, the Coffee / whiskey mixture should be drunk through the cream.


Hot chocolate with whipped cream
Ingredients:
3-4 cups single cream or coconut milk
10-15g dark chocolate (at least 70% cacao)
whipped cream
vanilla essence/extract
sweetener

Break the chocolate into a large cup. Pour over a little of the hot cream/coconut milk and stir until chocolate is melted. Fill with remaining cream/coconut milk and top with whipped cream. How decadent is that?

Hot chocolate cream and cocoa
Ingredients:
2 tsp (10 g) cocoa powder
1 cup whipping cream, half of it whipped
1 / 2 cup hot water
few drops of orange flavouring (Dr Oetkers is superb for this)
sweetener

Mix the cocoa in a mug with a bit of cold cream and sweetener to a smooth paste. Heat up the water and the UNBEATEN cream, pour into mug, add orange flavouring, top with whipped cream.
Lean back in your favourite armchair, sip slowly, have a few nuts to nibble with it, you wont feel hungry for quite a while either!


coconut ginger tea

freshly grate ginger, add to half a mug of boiling water, cover and let it steep for around 10 minutes, strain, add coconut milk, heat for approx 1 minute in the microwave, add sweetener of your choice Its less hassle if you have one of those tea infusion eggs. If you prefer you can make this with cream instead of coconut milk.

Hot chocolate

In a large mug mix a spoon of good quality cocoa powder with Splenda with hot water to a paste, fill with single cream to the top, microwave for about 1/1/2 minutes, careful now, stir it, make sure its not too hot.

Punch spice mixture:
3 cloves
1/2 tsp cardamom-pods
5-7 allspice kernels
1 star anise
(small piece of cinnamon bark)

Crush roughly using a mortar and pestle, then fill into a tea infusion egg.

Place all ingredients into a big pot and let it steep for a good 10 minutes.

Its wonderfully Christmassy and soothing, you can add a good splash of vodka or other spirits or replace the water with wine to give it a bit more oomph

Warming Soups

Chicken & Tomato soup

1 serving:
1 chicken fillet
2 tablespoons chopped sun-dried tomatoes in oil
1 tablespoon butter
2 teaspoons tomato paste
150 ml chicken stock
100 ml coconut milk
1 tablespoon chopped fresh oregano or basil

Cut chicken into strips or small cubes, brown in butter in a saucepan with sundried tomatoes. Mix in tomato paste, oregano or basil and stock, bring to a boil, reduce heat and simmer until the chicken is cooked through. Add the coconut milk and heat to serving temperature. Garnish with some extra tomatoes and herbs before serving.

Curried chicken soup
150 g chicken, minced
25 g butter
3 small tomatoes
1/2 cup cream
150 ml chicken stock
curry powder
salt and pepper
double cream

You can add other vegetables, eg diced courgettes, broccoli

Melt the butter in a pan and fry the chicken mince until browned. Add the tomatoes cut into chunks, add the stock and seasoning.
Let the soup simmer for 15 - 20 minutes, add cream at the end of cooking time.

Norwegian Fish soup

500 g cod or other white fish, cut into strips
150 g bacon, cut into strips
90 g chorizo
1 onion, cut into thin wedges
1 large pepper, cut into strips
1 tbsp butter
200ml fish stock
salt, pepper
fresh chopped parsley

TOMATO SAUCE

3 cans chopped tomatoes
1 tbsp butter
4 cloves garlic, finely chopped
1 finely chopped red chilli
1/2 teaspoon sugar
2 bay leaves

Start with the tomato sauce, mix all ingredients together, simmer for around 20 minutes until the sauce begins to thicken.

Saute the fish, bacon, chorizo​​, onion and pepper in butter until vegetables soften but dont brown them. Stir in tomato sauce and fish stock and bring to the boil. Taste it and adjust seasoning if necessary.
Serve the soup piping hot with chopped parsley, a spoonful of sour cream and sliced chorizo ​​on top.

Curried Meatballs

500g mince
1 large onion, finely chopped
4 tsp curry powder
2 tbsp ground almonds

1 tin coconut milk
1 tsp cumin powder
salt, pepper, 4 cloves of garlic, minced
300g green beans or any other veggies, I added a few sliced carrots
red chilli pepper - optional


Mix the mince, egg, almonds, half the chopped onion, garlic and 2 tsp curry powder, add salt and pepper, shape into meat balls.
Fry in hot oil/ghee until brown on all sides.
Remove meatballs from pan, add the remaining onion with curry powder, cumin and chilli if using, fry for a few minutes, add coconut milk.
Add green beans or other vegetables you are using to the pan, add meatballs, cover with a lid and simmer for another 15 minutes or so until vegetables are tender.

Turkey or Chicken Stew with mushrooms

750g Turkey or Chicken, cut into cubes
1 onion, finely chopped
Salt, freshly ground pepper
Paprika powder
3 tbsp tomato puree
1 pepper, yellow or red, cut into cubes
500ml Bouillon
Thyme
Chiliflakes
500g mushrooms, can also mix dried mushrooms into that, soak in water first
1 tsp lovage
Cream
Guar gum
Ghee

Heat ghee, fry meat until browned on all sides, add onion and pepper, fry for a few more minutes, add tomato puree, paprika powder, spices, salt and pepper, stir through, add enough bouillon that meat is slightly covered.
Cover and simmer for 40 minutes, stir occasionally, add cream and guar gum, bring to boil once more and simmer for a couple more minutes.

Serve with veggies and hash browns or Shirataki noodles

That's how they keep warm in Siberia!!

Son's friend at uni, hails from Siberia, gave me these recipes to try, these people know how to keep warm :D :D

Low Carb cheese soup with courgette, leek and carrots

1 tbsp butter or ghee
2 fat cloves of garlic minced
fresh finely chopped parsley and chives (or you could use frozen herbs)
500 g mince
500ml bouillon
Salt and freshly ground pepper
500 g leeks
1 heaped tbsp thyme
1 heaped tbsp oregano
200g cream
1 heaped tbsp curry powder, Schwartz mild curry powder tastes best in this soup
100 g onions, chopped
250 g carrots, sliced
250 g courgettes, chopped
300 g cream cheese (can use fat free if you prefer)

Heat butter in a large pan, fry onion and garlic until golden, add mince and fry until brown, add prepared vegetables, fry for a couple more minutes, add spices, salt, pepper, and stock and simmer until vegetables are tender. Add cream cheese and cream, if necessary more water, heat through and serve.


Siberian Cabbage Soup

250g onions, chopped
250g carrots, sliced
1 tbsp butter/ghee/goosefat
1 white cabbage (roughly about 1 kg), shredded
1 red pepper, diced
2 fat cloves of garlic, minced
fresh chopped herbs (or use frozen)
2 tsp, heaped, curry powder (Schwartz mild curry powder has been recommended)
1 pinch cumin powder
salt and freshly ground pepper
splash of tabasco
400ml coconut milk
400ml bouillon
1 heaped tbsp peanut butter
400g Bratwurst, raw, take out of the casing and shape into little meat balls or you could use cubed smoked ham if you prefer

Melt butter/ghee/goosefat in a large pan, add garlic and onion fry until golden, add vegetables, fry for a few minutes, add stock, coconut milk, spices, salt and pepper, cover with a lid and simmer until vegetables are beginning to soften, add the meat balls and and herbs and simmer for a further 10 minutes.

* You dont have to add the tabasco sauce to the pot, some people dont like their soup too hot, you can add tabasco sauce to individual bowls at the table.

Both recipes will give you 2.5litres of soup, they taste even better when reheated the next day and you have plenty left over for freezing.
Serve with a slice of low carb buttered bread or bread roll (recipes in the low carb recipes thread)

Butternut squash soup (or add any veg you like)
Chop up a butternut squash, 3 or 4 peeled spuds, a few carrots, an onion, half a chilli and a peeled garlic clove.
Roast Veg on a tray in the oven for half an hour (at about 180).
Transfer the veg to a pan on a medium heat.
Add 1-2 pints of chicken of veg stock, warm through and blitz for a smooth soup or stir with a wooden spoon to break down the veg for a chunky winter warming soup.

Sausage Casserole

This reminds me of school dinners :), a much tastier version, so simple, but so nice.
I have used mushrooms and courgettes as vegetables, but you can use other vegetables if you prefer, sometimes I add whatever leftovers I have in the fridge, eg broccoli, carrots, sliced green beans, sliced peppers.
This recipe has cream in it, but you could use sour cream, creme fraiche or cream cheese instead, any of these will give a slightly different flavour to this dish, have fun experimenting.

Use low carb, meaty sausages, or stronger flavoured sausages, I used chorizo last time and that was really nice too.

For two hungry people:

250 g sausages, sliced into chunks
2 tbsp butter
1 onion - sliced
2 cloves garlic - chopped
some dried chili flakes
a good handful of courgettes, cut into chunks
a good handful of mushrooms, cut into chunks
1 heaped tbsp of tomato puree
approx. 1 1/2 to 2 cups cream
1 tbsp bouillon powder
freshly ground black pepper
1-2 tsp oregano
few splashes of Maggi liquid seasoning
_______________________________________________________________________________

Fry the onion, garlic and chili in butter until onion begins to soften. Add the courgettes, mushrooms and sausage pieces and cook for a few more minutes.

Add tomato puree and cook for another two minutes, stirring all the time to make sure nothing is burning.
Add the cream over and seasoning, you might want to add a little more tomato puree or cream at this stage, leave to simmer slightly until the sauce is thickening.
Serve with more veggies and a buttery cauli or swede/turnip mash or a couple of new potatoes, depending on how low carb you need/want to be.

Mediterranean bread:

250g Quark
200g ground almonds
50g walnuts, ground
2 heaped tsp green pesto
3 eggs
1 tsp guar gum
50g flaxseeds/linseeds whatever you call them
30g olive oil or melted butter
1 tsp ground coriander
1 tsp oregano
1 tbsp baking powder
salt
Topping:
30g Sesame seeds (I have also added a few seeds into the dough itself)
50g Sunflower seeds
or any other seeds, eg poppy seeds, pumpkin seeds


Mix all ingredients together, pour into a well greased loaf tin, level out, sprinkle seeds on top, bake at 180°C for 45-50 minutes, ovens vary so you best do a skewer/knitting needle test.

You will get around 15 - 17 1cm slices, per slice less than 2g carbs

Kuku Paka

Kuku Paka - another wonderful recipe from Frida in Norway

Kuku Paka is a Kenyan chicken curry, the Eastern coast of Africa has been heavily influenced by the Indian cusine.

1.5kg chicken, cut into portions

1 large onion, quartered

2 red chillies - deseeded

2 to 3 tbsp grated ginger

2 tbsp minced garlic

plenty of ghee (or butter)

1 tbsp curry powder (use for favourite blend)

3 tsp cumin

1 can of chopped tomatoes

1 can coconut milk

salt & pepper

plenty of fresh coriander

courgettes, cut into chunks (or any other veg you want to use, eg cauliflower, celery or broccoli)

Put onion, chili, garlic and ginger in a blender and blend until smooth.
Heat ghee or butter in a pan and add the onion mix, curry and cumin. Fry this on medium heat for 5-6 minutes, stirring all the time, until it begins to thicken.

Stir in the tomatoes and bring to a boil. Boil for a few minutes. Add the coconut milk and bring to a boil.

Fry the chicken in ghee / butter on high heat until the skin is golden. Or, you could grill the chicken until it browns, this would actually add extra flavour to the dish.
Place the chicken pieces into the sauce and simmer for 45 - 60 minutes. Season with salt and pepper.

This dish is traditionally served with boiled potatoes, you could have some boiled new potatoes if your bg allows you to do that, otherwise eat with plenty of vegetables, eg I had a mix of low carb veggies, cut into chunks.
Stir in plenty of fresh coriander just before serving.

Cabbage Roast from Poland

A recipe from Poland

1 white cabbage
2 tbsp lard/clarified butter
2 onions, chopped
300g pork, diced
500g mince
1tbsp caraway seed
4 fat cloves of garlic, minced
1 glass white wine
10 slices smoked bacon
1tbsp lard/clariefied butter
salt and pepper

Cut out the stalk from the cabbage, but leave it whole, place the cabbage in boiling water, simmer for 10 minutes.
Remove from water, place in a colander, when its cooled, remove 12 big leaves from the cabbage and chop up the rest.

Heat 2tbsp of lard or clarified butter, fry onion, garlic, caraway seed and meat until browned, add the chopped cabbage, season with salt and pepper, you could add a stock cube if you like more flavour, add the wine and leave to simmer for 10 minutes.

Grease an ovenproof dish and line with the cabbage leaves, place meat mixture in the centre, cover with cabbage leaves, place smoked bacon slices on top, dot with a little more lard or clarified butter, roast in the oven at 170C for around 45 minutes.

Serve with a slice of low carb bread and more veggies, new potatoes if you can handle them.

Curry-Coconut Chicken Soup
Serves 4:
2 chickenbreast fillets
4 tbsp soy sauce
1 tpsp Paprika, hot
2 red chili peppers, deseeded, finely chopped
2 tbsp sesame oill
50g coconut flakes
3 tbsp mild curry powder
250 ml coconut milk
500ml chicken stock
250 ml cream
Salt
1 Lime
2tbsp sesame oil

Combine soy sauce and paprika in a bowl, add chicken fillets and leave to marinate for 30 minutes. Heat 2 tbsp sesame oil in a pan, fry chili pepper for a minute or so, add coconut flakes and curry powder, fry for a further couple of minutes, careful dont burn.
Add coconutmilk and chicken stock and leave to simmer for 20 minutes.

Add the cream, salt and juice of 1 lime, blend (a stick blender works well) until smooth.

Remove chicken from the marinade, cut into strips, heat remaining 2tbsp sesame oil, fry chicken until brown and crispy. Add chicken to soup and serve immediately.

Marshmallows

Sitting by the fire, toasting marshmallows or use to top your hot chocolate......either way these are YUMMY

2 x 100 ml water
3 tbsp powdered gelatin
2 tbsp Splenda
3 tbsp agavesyrup or use any other sugar free syrup, eg Da Vinci
1 tsp vanilla extract
¼ tsp salt
Chopped nuts or shredded coconut

Line a square tin, about 20x20 cm with greaseproof paper and sprinkle the bottom with finely chopped nuts in the bottom (or shredded coconut), sprinkle a little on the sides, kind of 'skim' over the surface.

Mix together 100ml water and gelatin powder in a bowl and leave to soak.

Meanwhile, in a saucepan mix together the other 100ml of water, Splenda and syrup, and heat to boiling point.

Pour the hot liquid in a thin stream into the bowl with the gelatine while mixing vigorously with an electric whisk.

Whisk the mixture vigorously for about 10 minutes, until its thick and frothy.

Pour into the prepared tin and cool for 1-4 hours, cut into cubes.

Total carb conent, if using agavesyrup is 16g, but you can use Da Vinci syrup or just use more Splenda instead, taste the mixture and adjust to desired sweetness.

My daughter bought me a book on One Pot and Slow Cooker recipes for Father's Day and I recently picked up a small book of One Pot 100 recipes for £2.50 at W H Smiths. There are loads of these things about and, as you learn about what foods do or do not work for you, you can adapt most of them.
