Hi - I'm new to this forum and I'm looking for some advice about what sugar substitutes to use in baking. My partner has type 1 diabetes and is also coeliac so I never bake for him but would like to try and wheat free/sugar free brownie or cake recipe as a treat. I've seen lots of sugar free recipes where dates are used and wanted to check if they are ok for people with type 1 diabetes? Or are there better/alternative sugar substitutes or recipes that you can recommend that aren't bad for diabetics? I'm also going to try oats or buckwheat flour for the wheat substitute.

There are lots of sugar free recipes or gluten free recipes online but not many recipes for both, so any help is appreciated. Thanks!
