Fussy eater. Any help?

My son was diagnosed with T1 diabetes in the six week holidays, we still find it very hard as he is a fussy eater and can count up to 10 things he will eat. Can anyone give me advice on how to encourage him to try new things, he is almost 10 years old. He has terrible mood swings also does any other parents out there have this problem?? I feel he would benefit from talking to someone his own age who has T1 but he wont entertain it.

My daughter was diagnosed 2 weeks ago, she's 11. When you say 10 things is that carbs etc...or are you looking for carb free snacks in between meals?
If it's main meals, how about changing the meals slightly...if he likes lasagna, make one with chicken and ham instead? That sort of thing??
