I have a friend who was depressed to discover that her cholesterol levels only fell when she cut out the carbs (white bread, rice, pasta). She could still eat small portions of brown rice or granary bread. I'm afraid I don't have the numbers to hand, but she definitely told me her cholesterol level halved.
What really upset her was that she could eat fat without her cholesterol rising (lashings of butter, mayo and oils), but could no longer have any white toast, chips or jacket potatoes to eat them with.
Depressing, eh? And completely against conventional medical thinking.
If I remember correctly, one of the first people to promote low carb eating used the Eskimo style diet of mainly meat, fish, oils and fats with no grains and virtually no veg. He did it because Eskimos have an unbelievably low rate of heart disease, and he found that his heart and blood tests improved dramatically on the diet.
Me? I think I would struggle to appreciate all that seal, whale, blubber and oily fish.
