Bs at 19:45 is 9.5. Really dizzy and struggling to type.Now that it's the hols and I have been following LCHF since the 28th of Jan, my husband and I have decided to have a little experiment. I have argued with my doc and DN that carbs are bad and thought that perhaps if they cannot accept that my lowered readings and weight loss are due to LCHF, perhaps I could give some examples of why starchy carbs are bad for me.
For the first time since my diagnosis I ate rice for the first time today. I had a green Thai king prawn curry with a very small quantity of boiled rice. A third of a carton - about 2 heaped tbsp.
my bs was 5.6 at 19:16 when I started eating. By 18:49 it was 7.2 and I felt quite dizzy. I also felt quite bloated. By 19:16 it's 8.3. I still feel dizzy and bloated. Am going to take bs in another half hour.
Ok. Still feeling rubbish but feel more compus mentis. Is 2 tbsp a lot. My husband had more. He is not diabetic but has followed the same diet as me. He has had no ill effects although he is not diabetic. The argument is that I should eat more carbs. Meat or fish and veg or salad do not do this to me. If bs had gone up by +2 then fine but by +3.9 is telling me to leave this food out of my diet. If you are saying that I would need to get used to it and or increase my metformin. Then I don't want to eat it. I don't want to pop pills so I can eat "normally". My goal is to lose weight and bring my meds down to as little as possible. I also now feel hungry. I really quite looked forward to eating it but didn't really get anything out of it. Perhaps it really is nurture over nature. How many carbs do you eat?I think all you may have done is prove you are not use to eating that many carbs. You will need to do the same for several days to really understand if you can tolerate that much carbohydrate.
Let us know what are in another 30 mins as it should be going down. Once it is you can walk the stairs (about 250 steps) and that will drive it down below 7 quite quickly

Retyped up my readings. Thought whole thing scary but interesting. Really thought it would be good to be able to eat rice occasionally but I think the message is no. I could increase my meds, get used to a higher bs but don't see the point. Interested to see what a naan bread or a tortilla wrap or a slice of toast would do. Will probably try these things over the course of time.Wow that's interesting. What Andrew Colvin says is probably true but I honestly had no idea how sensitive some people..well you Scandi..are to carbs. Really the only thing that spikes me badly is ordinary rolled oats and all bread. I can have small amounts of rice, pasta and potato with no ill effects.
I would be extremely interested to know what your BS was after 2 hours. Will you go on with the experiment and try food you know spikes you?
Don't think I was stressed. Bit worried by end though- lol!Interesting (!) experiment Scandi. Is it possible that you were also getting a bit stressed by the results and that this contributed to the to the BS pattern after eating? I was 6.1 this evening before dinner of pork, sprouts and cabbage. I also had some berries and yoghurt for dessert (repeat breakfast!) and my +2 was 8.8. I'm a bit stressed with work at the moment and maybe that was also a factor.
I think I miss poached egg on toast so that could be next. Wholemeal or gran nary?Try toast, but it will depend what you have with it and what type of bread! Butter and a poached egg might keep it OK. Jam certainly wouldn't. Lol.
That's why I chose the Thai green curry. Didn't even touch the free prawn crackers! Imagine. Lol! Glad I did it. Don't want to do it again as felt soo rubbish. The taste was really disappointing too. Always said that rice and bread were the things I missed most but rice along with Victoria sandwich cake is crossed off the list, although the cake didn't make me ill I just couldn't see why I'd wanted it so much. I think my taste buds must have changed!I'm fortunate enough to be able to eat some rice, but always have it as an integral part of a dish, such as paella or tonight pulled pork with rice and black beans. Both of those are cooked in stock, but have a fat element too.
If you would like to eat rice, then something like a paella, with plenty chorizo could be helpful? Nigella's recipe is one of my favourites, and very easy. Otherwise, have you tried cauliflower rice? I had that for a time, but now have rice, if that is the accompaniment to our meal. My OH couldn't get his head around the cauli rice, and as we eat the same meals, I was glad to be able to flex in his direction, for a change.
In your shoes, I would repeat your experiment once more, to confirm your findings or otherwise.
