The cheese would have slowed the level of your blood sugar rise, but the fast action of the carbs made the crash happen. I expect you continued to rise for at least another hour.
That is the thing with us, majority cannot consume carbohydrates, because the fact is, its all about diabetes. Its like people with lactose intolerance, they would avoid milk and dairy products like the plague, its the same for those people with diabete

I had a feeling that was the case. You do not have to follow the advice of your DN. I think most of us don't because of the problem you are having. The alternative advice, which others have mentioned, is to drop the carbs.
for me, If I followed the advice from my diabetic nurse, I would be on insulin and have uncontrolled diabetes. I have not seen a diabetic nurse for 10 years, no point. Still diet controlled,. Must be doing something right, This forum is fab for advice.
