Hi

I am a A level student and studying diabetics for my home economics coursework. As part of my study i am looking at recipes to reduce the sugar and carb content. The first one that i am looking at is lemon meringue pie, is this a dish that most diabetics tend to avoid? Is there any other dishes that you could suggest that i should look at that is reducing sugar or carb content?

I bake loads, and do it all with sugar and flour. If you are looking at lemon meringue pie, you need to make a number of things with sugar alternatives, such as meringue: http://alldayidreamaboutfood.com/2012/06/shannons-sugar-free-meringues-low-carb-and-gluten-free.html or lemon curd.

Now the down side is that many of these ingredients also have a laxative effect, so you wouldn't want to eat too much of them.

If I'm honest, low carb sweet things are something that I avoid as they don't taste great and have nasty side effects. I'd rather eat sweet things in small doses and apply the right amount of insulin. Hence why I bake that way!

I regard all carbs as sugar, although there are exceptions. Having given up all cakes, sweets, puddings & biscuits for a year I don't think much about substitutes at the moment. But I am interested in recipes which avoid processed grains & most root veg.
