It doesn't look like much, but "chicken dinner" doesn't actually tell us much. It could be half a chicken drumstick and a couple of two cabbage leaves, or the full Monty with stuffing, spuds, roast parsnips, etc. When you calculate calories, carbs or whatever (that tells you it's not enough), do you weigh things or guess your portion size?
Further, reading your signature, it looks like you're still trying to lose weight? If that's the case, I might be guided as much by both my blood scores and how I felt. Are your finger prick tests satisfactory and do you feel well?
If you want to eat more, up the vegetables and see how you go. If you want to get more scientific then myfitnesspal or any of the others might help.
Finally, don't forget most of these nutritional calculators are designed for non-diabetics, so can tend to recommend lots of carb.
