For a treat, I buy a pot of coconut bits from sainsburys (slightly higher carbs than some nuts, but alright in smaller doses and low GI) and I melt some 85% chocolate. Dunk the coconut in the chocolate, or spoon some on, and let it set. Keep in the fridge. Two average size pieces very little carbs. Yum! Bit like a hard bounty bar.
To make something even more like a bounty bar, I buy unsweetened dessicated coconut, add coconut oil and double cream while heating to make a gooey mass. Shape into smallish squares and put in freezer to set hard. Dunk in melted choc (85 or 90% I use) and choc sets immediately. Wrap in tin foil and store in freezer. Can atke out individual bounty bar sweets then, leave to stand for 10 mins, then eat. Yum! again.
