Hi, Ive never seen frozen avocados? Can you let me know where you buy them (is it in the UK?). I bought a couple of fresh ones from Aldi last week and they were going brown after a day or 2. ThanksI have bought a bag of frozen avocados, which are great for whizzing up a batch of "chocolate mousse" and in salads etc but I wondered if anyone had a recipe for a hot baked avocado dish (vegetarian if possible but I can adapt it)/

Hi, I did an avocado last week with mushrooms, bacon and cheese in the oven. I literally laid the bacon over the avocado slices and mushrooms in a foil pocket with some Boursin chives & shallot soft cheese on it and a little grated hard cheese and cherry tomatoes. I didn't actually roast it in its skin though but could have probably stuffed this with the ingredients.I have bought one too yesterday been told to roast it any ideas as well ?

Here it is. She used courgetti instead of pasta. I didn't have any, but it looks nice...Oh and my daughter used avocado to make a creamy dairy-free courgetti sauce recently. I don't know the recipe though.
Thats great, thanks. Yes, i find that if I buy the ripen at home ones you leave them for ages checking every day and they're too hard to use, then one day you turn around and they've gone too soft!! So you cant plan what to use them in. Incidentally, what is the aubergine chocolate mousse you mention? Or is it something that is well known and I just don't know of it?@jal16 I got them in Tesco, in freezer with vegetables and fruits. Cant remember exact price but it was much cheaper than buying fresh avocados, as you say they can go brown really quick - or stay hard for ages, annoying.

Thats great, thanks. I've never made it before and am finding that mousses and most small desserts are quite high in carbs at the supermarket. Ill try making it soon. Although the other day I was pleasantly surprised to find that a sainsburys chilled choc eclair was 10 carbs!! cocoa powder (check the carb content)
vanilla (optional)
Whiz all ingredients up in a blender, I often mix the cocoa powder in a tiny amount of milk first to make a paste so it blends evenly. I do it by eye for quantities, some people add a splash of milk if the mix is too firm, put into fridge for 20 mins or so to chill.
I love this chocolate mousse, I have made it a lot for parties and added berries to serve.
