Don't worry about the one hour spike. Most food gives us our highest reading at about one hour. The reason for a two hour test is to see how well your Pancreas copes in producing enough insulin to bring it back down to normal after 2 hours. Yours is doing great! If the 1 hour spike was TOO high, then you wouldn't be back down to good levels at 2 hours. There is loads of discussion about individual spikes causing damage, but non-diabetics can reach almost 8 and possibly higher after certain foods, so don't concern yourself. Concentrate on the 2 hour and you'll be doing all you can to best manage your diabetes. Well done on your results so far.
