Beryl, most salad's fine (ideal in fact!) but don't go overboard on the tomatoes. Sour cream is good as it also has very few carbs, and neither does chicken - if there were ever to be any issues with that, they might come from the way it was cooked, and not from the poultry itself.
Your liver will often give you a rather inelegantly named "dump" in the morning to ensure you have enough glucose for energy to start the day, so we do often start off higher. As you go through the day, activity and meals mean your glucose levels get used and replenished, but generally you will end up with a bit less remaining than you started with. So nothing to be overly concerned with!
