Birthday cake recipe for Diabetic type 2

People who think that all diabetics are lazy - think some education is in order :0)
Does anybody have a birthday cake recipe - my hubbie has said that I cant make him a birthday cake this year unless its one I can also eat which is really sweet.

Main thing is that I'm diet only , apprarently no need to test but I do cause I'm not a twerp.
Hes really worried that if I eat normal sweet cake again that I'll be sick again with a bad stomach.
Obviously I dont want to be ill on his birthday but would like to make him a cake and celebrate with him.

Its my birthday christmas eve as well and same applies.


Any thoughts
 
Thanks hopefully I'll find something also cant eat Cream, cheese or full fat milk either as very allergic to them.
 
Cant remember the place I found this, but apparently it is originally a Sainsburys recipe. It was off an American website.

50g butter
50g Lindt Excellence 70% cocoa dark chocolate
100g ground almonds
1 tablespoon baking powder
1 large egg
2 tablespoons water

The chocolate needs to have around 30-40 gs of carbohydrate, read the label. The website claimed the whole quantity has 540 calories, 33g carbs, 42g fat and 8g protein per 100g and that tghis was what it said on Sainsburys website.

Method

Melt butter and chocolate in microwave - cook for 40 seconds, check and stir, then cook for another 40 seconds, chocolate should then be just at point of melting, stir until fully melted. Mix beaten egg and water into liquid.

Mix the dry ingredients together and stir in liquid, mixture should not be too dry.

Grease a microwavable glass bowl, put in mixture and cover. Cook in microwave for about 2 and a half minutes. Turn cake onto plate and place in fridge for about 2 to 4 hours.

Serve cake cold with raspberries and sour cream.

You could try replacing butter with oil of some kind I make this about once a month
 
Look up a recipe for Torta de Santiago and substitute a sweetener for the sugar in it. You could then make a compote of berries with a sweetener and pour it over

there is a cake called molly cake it has no fat no eggs no sugar mainly dried fruit you can ice it if you like all my friends go mad over it good luck
