Type 1 Blood levels change without eating....

We re rapidly approaching our 1st year with my 10yr old daughters type 1 and pretty much have a handle on it but have a couple of questions relating to blood levels changing when no food has been consumed.
She hardly ever suffers from Hypos (they tend to be 3.5 to 3.9's when they do happen but shes very aware and can detect these) but what we do get sometimes is her levels rising overnight.
Last night we went out and watched Starwars, went to a restaurant where she had her favourite meal Spaghetti Bolognese, bloods were 5.6 before eating (7pm approx), had the correct dose and checked her at 9pm (8.1) and 11.30pm (5.4) so all good....except this morning she was 12.1!!
I realise that Spag Bol can be troublesome due to slow release but thats quite a jump in anyones book!

This seems to happen periodically with no set pattern so I guess we just roll with it?

Thoughts greatly received.
 
It could be that she went hypo overnight & rebounded hyper or it could be dawn phenomenon or maybe she's coming down with something?

Hopefully another parent will be along shortly with more ideas but if it is happening with no pattern, other than suggesting some 3/4am testing, I would just do a correction dose in the morning.

There's a lot of fat in a Spaghetti Bolognese and this can impact on bg levels for several hours after @robadob, but it is quite possible that she went low in the night and her liver compensated, if you Google the term Somogyi Effect you'll get a good explanation on how this can occur resulting in higher waking bg levels.
