Following very low carb so would it have been much different if I’d had a high carb meal?

The C-peptide test is (indirectly) measuring how much insulin your body is producing - what you have or haven't eaten won't make any difference to the results. Basically, it means your insulin production is fine.
I believe it is mostly used in confirming a Type 1 diagnosis - a T1 will have a very very low or 0 C-peptide value. C-peptide is a byproduct of the body's process of making insulin.
