12 DAYS!!!Hubby and I are embarking on a 12 tour of Scotland in our motorhome,we are going off grid and do not plan on using any campsites (until we smell worse than the dogs and need a shower) I only have 2 gas rings to cook on and no mains electric,I do have a fridge. On previously trips we have eaten lots of potatoes,pasta bread lager and cake. Now hubby is LCHF diet I am at a loss at what I am going to be able to cook,there is only so much cauli mash and stew one person can eat. Help please.x

We havent used campsites for years, we are too tight to pay £20+ a night to park in a field. We have has some great adventures parked in forests and edges of lochs. The thing about going to Scotland is its perfectly legal to wild camp.I love a challenge, especially someone else's. You'll have a great time. I dare say plenty of Whiskey will be consumed! Not by me I cant stand it! The problem with cooking fish,curry etc is the smell it leaves behind,it permeates into everything and you can smell it for days. Omlettes and stir-fry are good idea,thank you. He does have a cooked breakfast every morning,which he cooks himself!! His DN told him to swap it for porridge,which he did resulting in a BS of 18.9! Good old NHS!XHi Janabeth,
You can eat bacon and eggs, sausages, omelettes, in fact any meat you like with vegetables that grow above ground. You could do curry and have cauliflower rice with it. Or make the curry with the meat of your choice and lots of veggies.. I like cauliflower, mushrooms and a few peas in mine and then I don't bother with rice. What about stir-fry for a quick and easy meal or fish fried in a little butter with salad.
You can still have your cake and eat it too - look out for the recipe for Stracciatella cake - you could make a cake or too to take with you. Its LCHF and great on its own or with cream.
Whilst the lager is out for him at least, he could swap it for a short such as Gin or Whiskey with a sugar free mixer.
Rowan, Im jealous,you have a little oven! Shame about the fridge though,ours once stopped working on gas think it was about £60 to get fixed. But now it doesnt work off the battery when the engines running!This is my first summer low carbing and I've previously relied heavily on carbs when out in my camper, so am having the same problem as you.
I have 2 rings and a small oven, and a fridge that only works when the engine is running, it stopped working on gas during the heatwave a couple of years ago!
I didn't know wildcamping is legal in Scotland, not that it makes much difference, I don't use campsites either, never seen the point in getting away from it all and sitting in a field with loads of other people
I'm hoping to get up the Lake District this year, and possibly the Scottish borders, but a lot depends on when I have some surgery, it's going to put me out of action for a couple of months or so.
I hope he'll be drinking Whisky not Whiskey, the 1st is Scottish, the 2nd from anywhere else including the USA, Canada, France and Japan. Not that there's anything wrong with Whiskey, but when in Rome ......... Back to food, mini bbq for meat/fish and salad, eggs in any form, fry up for breakfast
Little bottles of wine???I think big ones would be better! Hubby really cant tolerate bread or rice his bs goes through the roof Im afraid. Im sure i'll manage though,he will just have to eat what I put in front of him.xI cook some curry and chilli con carne before we leave. Then keep them in the freezer and we have those with the uncle ben's express wholegrain rice. I just have a little rice with mine.
I should imagine they'd keep a couple days in the fridge. That might help you get over the first few days with meals.
Brekkie is easy, berries, yoghurt and a sprinkling of granola with some almond milk.
Obviously you'll have all your veggies and salad, butter and cheese in the fridge.
I use a light wholemeal diet loaf when we're in the van, for emergency sandwiches, and toast for a
cooked brekkie.
Bacon, sausage, toms and eggs etc.
Little bottles of wine too! Most important.
Then just go shopping again when you run out.

yep, gone up from one shaggy old collie to 1 shaggy old and 1 skinny young collie. 3 weeks in French aires should be funMy gas fire is also not working and we need a new exhaust! And will be sharing with 2 wet dogs! I love every minute of it though.x
France is brilliant,done it a few times. Only problem is all the lovely carb ridden food! Especially freshly baked baguette!yep, gone up from one shaggy old collie to 1 shaggy old and 1 skinny young collie. 3 weeks in French aires should be fun
I agree, we love France, collie sleeps under the van and has caused a stir hanging out the LHS front window (looks like she is the driver!France is brilliant,done it a few times. Only problem is all the lovely carb ridden food! Especially freshly baked baguette!
