You need to be careful with eating again and taking extra insulin. You really need to leave time for the insulin you've taken to leave your system, otherwise you might send yourself into a hypo. Even rapid-acting insulin can hang around for about 3 - 4 hours, so taking more within 4 hours can mean you're layering it, which is difficult to control. You'd be better eating low-carb snack if you're hungry. My current favourite is brie melted in the microwave (20 secs should do it) and then spread on a slice of ham - roll the ham into a tube and scoff! No carb - no insulin needed!
