I'm Newly diagnosed so not sure how to count carbs when I look on the info on packaging it say carbs & then underneath it states of which sugars which one of these numbers do we use. I maybe being dumb but i've never had to look at this info until now. Many thanks
Sugar is just a form of soluble carbohydrate, so the sugar pretty much hits your blood stream right away. The other carbohydrates have to be digested before the the sugar can reach your blood. But sooner or later all of the carbs will end up in your blood.
Fiber is the only only form carbs which don't break down into sugar, but in the UK they are listed separately
Definitely use the (total) Carbs figure - sugar is essentially a specific type of carbohydrate, but the total value is what affects/raises your glucose levels.

@Brekkie It really depends on the information you have on hand and what works for you.
I find it much easier to do it from raw but the count can be very different so make sure you check the label. Ie in Australia at least the label for rice/pasta etc gives the nutritional info for cooked and uncooked. Don’t want to mix these two up or you will get very different results.
