your Dr should be very happy with your change of lifestyle. IMO I wouldn't drop the cheese and eggs altogether..porkfat/lard is a good fat, so is duckfat, butter, olive oil, coconut oil and peanut oil... cut all grain oil and margarine/trans fats
if I cut my carbs back,I replace them with good fats and oils, keep my protein normal range, lots of non starch veggie, beans pulses peas
use a food counter like my fitness pal to do a dietary count of carbs fats and protein, there are often some surprises
your trigs are very good...in an ideal world you would have more HDL, omega 3 from fish, nuts, flaxseed..use the healthy fats/oils...from memory this also swaps for some LDL

I take a low dose statin for vascular health which also drops my total cholesterol/ldl, ...there is plenty on both sides of the argument, you need to make up your own mind
