Coconut flour, sesame flour and oat bran

I've been reading on the forum that members use coconut flour as being lower carb, so when I spotted organic coconut flour in the FreeFrom aisle in my mother's nearest (huge) Tesco Extra, I nabbed it. As we don't bake, I thought that we could experiment with coconut flour and others, and make sauces and also use it for breading and pan-frying. I like the idea of coconut floured-fish, for example.

Couldn't find organic sesame flour anywhere, so I ended up buying some from iHerb, When it arrived today I was shuffling stuff on the shelf, and noticed that on the package it had the carbohydrate listed as 25g per 100g ! I looked on the manufacturer's website and on that it's 18g. Still too high for my purposes.

This is a UK website, but they are talking about net carbs and AFAIK UK nutrition labels are always net carb and it's a legal requirement.. So I'm thoroughly confused. I thought that coconut flour was supposedly around 9g carbs per 100g. Being organic won't make any difference.

Then I noticed that it says fat-reduced on the package so I thought I'd give y'all a heads up that fat-reduced coconut flour, whatever they say about net carbs in their blurb, is carbier than the non-fat reduced stuff. Mine is going in the food bank box.

Sesame flour

The 16 oz package of Kevala organic sesame flour that arrived today is only 10g carbs per 100g which I'm happy with. Again. I'd like to use it for sauces if possible and if not, I hope it will be OK for breading and pan-frying. Anyone done this ?

Oat bran

I was kinda confused when the Dukan Diet organic oat bran on offer at Avidlite turned up and was the French version ie Son d'avoine. 1 tbsp is 5g carbs and I've found quite a few recipes using it online so I'm happy with that. Anyone used it ? A couple of the recipes use it for breading, another recipe was for wraps and another for galettes.
 
1tbsp of coconut flour weights 12g (I have just weighed it) so this is only 3g carbs (at 25g/100g) per tablespoon which is lower than the oat bran you are happy to use. Also are you sure that the grams for sesame flour is per 100g? I think that it might be 10g per ounce (28g). From a carb point of view I think that almond flour is one of the lowest - Sukrin has 4g carbs per 100g.

Sukrin's UK site quote their sesame flour at 6g carbs per 100g. It's reduced fat, but still contains 19g per 100g. I don't see any claim for it being organic though, if that's vital for you.

Coconut flour is very dry so cannot be used in the same way as wheat flour anyway - I have to add more liquid (water and eggs). I find it good for an occasional pizza base (3T + 1T ground flax for the whole thin crust, shared by 2 people), rare breakfast American pancake, and it worked nicely as the crust/thickener for braised steak I did the other day (1 tsp for 2 steaks).
 
The Sukrin info is plain wrong. On the back of the package pf coconut flour that I have it says 25g carbs per 100g, on the website blurb it says 18g

If you click on the small back of pack pic next to the main pic of the coconut flour it does indeed say 9g !!!! Yet MY back of pack says 25g. The Tesco website says 9g also but there's an asterisk for 'typical values'

To reiterate, this is a UK website and the pack was bought in Tesco. The company which owns Sukrin Ltd is Norwegian but Sukrin Ltd is in Hove, nr Brighton. Norway in't in the EU but is a member of the European Economic Area.

As to the organic status, the pack front has an organic stamp on the front and an EU organic leaf logo on the back with the license #.

So anyway you look at it the info about carbs is confusing and misleading.

I don't feel inclined to bother with it, their carb figures feel like creative accountancy so I don't feel like I can trust them.

I'm going to look for another brand with accurate labelling !
 
Interesting. My pack says 25g per 100g but the website says 18g and as you state the small pack on the website states 9g. If you scroll down to the FAQ section it also states:
Is coconut flour low-carb?
Sukrin Coconut Flour is very low in carbohydrates, containing only 18g per 100g. If you are counting net carbs, our coconut flour has zero. (18g carbs less 40g fibre).
Surely this also isn't correct as UK packaging should display net carbs I though. I feel an email to Sukrin coming on!!

First of all let me apologise for causing confusion.

Because coconut flour is a natural product we get differing results when the product is analysed, and they can vary greatly. The current pack the you have states 25g carbs, but we have taken an average of the last few harvests and have decided on 18g as a better representative average, and which will be printed on future packaging.

Thank you for pointing out that the photo we are using states 9g on the pack, this is an old image which I will ask my designer to replace.

We are aware that UK packaging actually already states net carbs, it has taken a while for our website to catch up. I have removed this statement today from the almond flour and coconut FAQ´s.

So I guess it was worth sending the email - good that they replied and are going to correct their website and the bonus for me is that the coconut flour I was happily using at 25g per 100g is actually lower carb than I thought! Does that help clear anything up?
 
@Mongolia that's what I call a result !. Maybe I'll try the coconut flour now then and see how I do with it.
