I can honestly sympathise with your friend, having a child with diabetes is far easier managed than the coeliac disease. Get her to make an appointment with the hospital dietician, they should then co-ordinate with the diebetes nurse and help her choose items available free on prescription. I have tried to bake gluten free bread and you need a degree in physics to make anything half decent and anywhere near edible.
Glutafin do a tasty GF fresh sliced white bread available in batches of 8 loaves and freezes well, they also do a selection of rolls, biscuits, pasta and pizza bases (all available on prescription). Get her to check out Sainsbury's, Tesco and Asda they do a good selection, but warn her GF is expensive, a better choice of biscuits are available compared to prescribed ones but do average at about £1.70 per packet. I recently bought my son Andrew puffed honey rice breakfast cereal (similar to sugar puffs) , he loves them but at £2.89 a pack that has about 10 servings, they are expensive.
As for recipes its trial and error, i have a good peanut butter cookie recipe for her if her son likes peanut butter, let her know and i'll gladly type it out for her.
Tell her to give herself plenty of time to shop, as looking on the back of food items for containing Gluten found in wheat, barley, oats and rye, will take ages, that is till she gets use to it.
She can't go wrong with good old potatoes meat and two veg, till she gets the hang of it.
