Confusing BG Numbers

It's still very early days for me, only diagnosed as T2 about 3 weeks ago. I am taking Glucophage SR - 1000 mg twice a day, and having read the posts on this forum, trying to low carb my way to good BG levels. After a slow start, things are improving - I still have 'moderate' ketones, but think this is due to weight loss. I am testing fairly frequently, and am delighted that the trend is downward, from the scary 19.5 and is sometimes a respectable 4.6 before meals and again 2 hours after eating.

What has me a bit baffled is that last night BG was 4.6 two hours after eating, but when I checked at bedtime, it had risen to 5.6, despite not having ingested any more food. What caused this rise, and is this 'normal' for diabetics? My morning pre-breakfst reading was 7.4. Would welcome some insight into this, and any advice on whether I should be doing something to stop the upward creep of the numbers!
 
What did you eat that night? Also did you have any exercise before bedtime which may have raised your BS?
 
Slow digesting, slow stomach emptying, a snack you forgot about. Or just Murphy's law. Any or all of these
 
Supper was lamb chops and cabbage. In terms of exercise, nothing strenuous, just routine domestic stuff. The before bed reading was about 4 hours after I ate. Definitely no snacks!!!
