Is Couscous any better than potatoes in a LCHF diet or what about American grits (ground corn) just looking for alternatives as I am going to start my LCHF diet tomorrow, and what about pulses and beans (lentils, haricot beans etc) as I tend to use these in the slow cooker to bulk out stews etc
Couscous has about 20g carbs for a 100g cooked serving, so not much different to boiled potatoes I'm afraid. Red kidney beans and lentils are about 20g carbs per 120g cooked weight. You're better off missing out the couscous, but could have a few pulses in a stew. Personally I'd go for more veg like courgette strips or julienne instead of couscous and cabbage to pad out a stew.
