It is not all doom and gloom tho
I get gout and I have been given warnings about plaque in my arteries (also known as hardened arteries) and it killed my brother with help from lots of booze.
First the bad news
Pasta, rice and potatoes are
limited or off the menu if you are serious about a T2 friendly diet. Because carbs is what sends us high.
You are lucky, because you like cooking and the four specialist ingredients I use are.
Almond meal/flour - which is made from ground almond kernels
Coconut flour - which is made from coconut after the oil is removed
Xanthan gum - you can read about this on Wikipedia and it is a gluten replacement for nut flours
Fake sugar - you need a cooking one.
All these are available from our local major supermarket and enable me to make lo carb bakery products and other food.

My next trick is I use some kitchen plug-ins to make cooking faster and easier.
microwave
flat sandwich toaster press I use it as a grease free frying pan it cooks from both sides I use spray oil for crisping and release
piemaker I use it to make cakes not pies
Other tips
Xanthan gum 1 teaspoon dissolved makes something like a cup of egg whites and can be used in cold mixed food as well as cooked food.
I bought wholesale bulk nut flours and nuts
The net has plenty of lo carb recipes but I am learning to adapt lo carb from ordinary recipes.
I treat experimental cooking as fun.
